Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Pretty nice stuff. Citrus and nice tangy start with super dry finish. Amber pour. Bottle shared at tasting.

750ml screw top bottle. Poured a dark clear golden yellow color with not a lot of head - maybe just a wisp, but that’s about it. Flavor was light, a bit bland, but drinkable. Not too sweet which was nice.

750ml bottle pours a dark gold with no head. Nose has apples, a little apple core, mild smoke. Flavor is buttery, sweet, apples, some pie crust too. Oily finish.

Bottle courtesy of Tom, thank you sir! Clear golden yellow color, still. Aroma of apple flesh, skins. Taste is tart skins, dry finish. Very tasty.

Bottle from Three Counties Cider, consumed at Isobels, Eardisley, Herefordshire, Sunday 1st November 2015. Almost copper in colour, good clarity, busy carbonation. Wet appleskin on the nose. Furry across the roof of the mouth, typically quite twangy, fizz continues, appley flavours indeed but these have the air of a more mainstream and less artisan/craft cider. Quite heavy tannins, soft in mouth a little bit of apple pie mush when you leave it in the mouth for a while, ok but Tom Oliver makes much better ciders. A6 A4 T6 P3 Ov10 2.9

Bag in box at Barrel Drop in Nottingham. Hazy silver yellow color, still. Aroma of peach, pear. Taste is easy drinking, sweet start, lightly tart finish.

Bottle sample at the source courtesy of Tom, thanks! Lightly hazy pale yellow color with a glint of silver. Flowers and light tannins in the aroma. Slight edge of acid in the taste, fruity and elegant.
