Undated can drunk 4/20/25.
Dark, clear. Small, light tan head, modest retention.
Not too much licorice in the nose. Smells like unroasted barley instead of adjunct. Lots of dark fruit, light milk chocolate and no alcohol or flaw noted.
Fruity and chocolatey. Lighter-bodied for its size, though not thin or watery. Gains some sweetness with warming, but quite dry. Adjuncts not overdone at all. Lingering dark fruit, licorice, chocolate, coffee. Competent.

Undated can drunk 4/18/25.
Clear, medium-to-darker-amber/chestnut. Small, dark beige head, moderately-low retention.
Get the bourbon and I definitely get the red wine. Moderate acidity, though nothing aggressive, at least in the nose. Good buttery oakiness, light caramel and lots of fruitiness. Not boozey. A bit vague in the nose, though; hard to get at much personality.
Rich and malty with brown sugar, caramel, cherry and raisin. Wow, this is quite complex and flavorful despite the rather reserved nose. Rich malts but drying out nicely on the finish with plentiful red wine, oak and light bourbon and good attenuation. Not acetic-driven and I daresay, there's virtually none here. Soft, rich, flavorful, balanced, not too acidic....

500mL bottled March 26, 2020. I believe the last/most recent release of Oudilis, as of writing this (April 2025). Drunk 4/4/2025.
Scant head despite a pretty hard pour, though at least some brief bubbles. Deep golden-honey-bronze. Good clarity.
Woody and funky with a strong lactic presence and good all-around lambic qualities. Quite fragrant and I don't think I can find any acetic. Mild, fruity Brett undertones. Strong cheese rind on the finish. Does seem like the lactic character is going to be quite stiff here...
And yet, it's not so bad at all, surprisingly. There's a very unusual madeira/sherry-like character that is noticeable but not dominant. Adds a lovely layer of complexity to the otherwise fairly malty, surprisingly mellow and balanced lambic. Oaky and woody but not tannic or buttery or toasty. Goes down easy and refreshingly as a lambic should with minimal carbonation and a slick texture. Mildly fruity brett and funk throughout. Love that Sherry note!

750mL bottle, 9 years old, drunk 4/2/2025.
Good clarity and a rich amber-brass color. Fluffy-to-creamy, butter-tinted head.
Fruity, moderately tart Brett is the first thing I smell, followed by a touch of caramel and toast. Very mellow and well-aged with zero aggressivity from the acid profile. Fruity, complex, tons of mineral and mild funk.
Rich and malty with zesty, moderately tart acidity and tons of fruit from aged hops and Brett. Moderate lactic character with some toast and caramel from the malt. Juicy raspberry-like fruits retronasal. Little/no oxidation; certainly no more than you'd expect at this point. Still very well-carbonated with a tight and spritzy character to it. Juicy, almost, with excellent balance and no acetic any where. Wood is dry, low in tannin with no toast.

750mL bottle, one and only blend, drunk 3/27/25 at a cool 9 years old.
Pours a clear copper-brass. Good-sized, off-white head shows plentiful life.
And no oxidation! And, on top of that, little/no acetic! Instead, a round, buttery oak character with low tannin, mild brett and lacto and well-integrated wine notes. Lovely fruitiness on the finish with more of that lovely, round oak. Nothing aggressive/weird.
Earthy/granite notes up front and drying out the finish with buttery oak throughout and plentiful grape character. Still very tart bordering sour, but the acetic, if it was here, is minimal. Instead, a very strong lactic presence with mild, fruity brett remains. Soft, chewy, slick body with ample depth is not overattenuated. Lingering lemony-tart acids, yogurt notes, earthy granite, juicy wine and round oak all provide for a complex, robust sour beer experience.
