Description
De bieren worden gebrouwen in een moderne 25 Hl installatie in Erpe-Mere. Gelet op de sterk groeiende vraag en het plaatsgebrek op de huidige site werd de brouwerij voor verdere groei genoodzaakt uit te kijken naar een bijkomende locatie. Deze werd gevonden in de Industriezone AALST ZUID III, waar een bijzondere ruime productiehal werd aangekocht. Deze werd volledig gerenoveerd en uitgerust voor de verdere expansie van de brouwerij. Op deze site werden 6 gekoelde cylindroconische gistingstanks van 37 Hl/elk geïnstalleerd. Tegelijkertijd werd er een nieuwe Italiaans- Duitse afvullijn geplaatst voor 33 cl flesjes, en een ultramoderne hergistingskamer.

Ondanks alle investeringen in high-tech toestanden blijft de missie van de brouwerij ongewijzigd: op ambachtelijke wijze smaakvol natuurbier brouwen in een moderne installatie, met enkel de beste grondstoffen en zonder toevoeging van om het even welk kunstmatig additief!

75cl bottle from Sophie's Beer Store. Drunk prior to England vs Italy in the Euro Final. Pours a murky dull gold, no head remaining. Aroma is gently sweet, floral. High carbonation, Taste seems more akin to a sweet saison than a witbier, bright spicy sweet character, excellent balance. Lovely.

Bottled 10/20. Strong Pale? -- in a La Trappe goblet it's darker than their Quad. Lovely dense cream head lasts well. Aroma is yeasty and earthy with dried and stewed fruit, weeds. 7- Medium bodied, medium low carbonation is just right. Malty with dark fruits it is but drier than guessed, particularly with quite firm spiced bitterness at the end. Good. Liked the forthright finish.

0.33 l bottle from 'Ace Drinks', bottled in February 2021. Hazy, golden with a large, foamy, stable, white head. Sweetish, gently fruity-floral, quite spicy aroma of orange peel, coriander, vanilla, nutmeg and some banana. Gently sweet, moderately bitter, rather yeasty, quite spicy, gently fruity-floral taste of banana, clove, nutmeg, coriander, orange peel and vanilla, followed by a medium long, moderately bitter, gently dry, rather yeasty, quite spicy finish. Medium body, fairly effervescent mouthfeel, lively carbonation. Nicely amped-up Wit, fairly yeasty but also with a good amount of spices. Tasty!

Pour is a cloudy gold with a huge white head. Aroma is super fruity esters with even some white wine showing up. Flavor is white grapes with some honey and a chalky dry malt. There is a little alcohol felt after the swallow. Pretty good saison. The flavors were all there and even with the bigger abv then usual this was still refreshing.

Bottle. Put it into a thistleish Tripel Karmeliet glass - to which I guess a Belgian Scotch Ale following the Carmelite tradition might be suited. Ha. It looks good in it too -very dark brown with a beige head that settles to a dense inch. Big malty aroma with dark sugars, dough, spices, licorice. Full bodied, maybe a bit fizzy. Not as sweet as I'd guessed with a touch of vinegar toffee, singed and toasted notes offsetting the brown sugar and stewed fruit elements before firmish bitterness. Carries its alcohol with aplomb. Better as it warmed to ~12C.
