De bieren worden gebrouwen in een moderne 25 Hl installatie in Erpe-Mere. Gelet op de sterk groeiende vraag en het plaatsgebrek op de huidige site werd de brouwerij voor verdere groei genoodzaakt uit te kijken naar een bijkomende locatie. Deze werd gevonden in de Industriezone AALST ZUID III, waar een bijzondere ruime productiehal werd aangekocht. Deze werd volledig gerenoveerd en uitgerust voor de verdere expansie van de brouwerij. Op deze site werden 6 gekoelde cylindroconische gistingstanks van 37 Hl/elk geïnstalleerd. Tegelijkertijd werd er een nieuwe Italiaans- Duitse afvullijn geplaatst voor 33 cl flesjes, en een ultramoderne hergistingskamer.
Ondanks alle investeringen in high-tech toestanden blijft de missie van de brouwerij ongewijzigd: op ambachtelijke wijze smaakvol natuurbier brouwen in een moderne installatie, met enkel de beste grondstoffen en zonder toevoeging van om het even welk kunstmatig additief!

New rate, draft @ Brasserie Arnage, Cesena. Cuivrée, col épais blanc-cassé. Arôme st malté dans un style très belge, pâle pils, dark crystal, sucre résiduel avec un léger fruité noir. Palais est malté, pâle pils, note de double sur pointe de levure. Fruité noir rappelant la date et figue. Amertume perce en rétro, noble avec ici un exemple belge typique, sans plus. courtesy of gunhaver. pours dark brown, thick beige head. Aroma is vinegary, sugar, fruits and malts. Taste, similar, good vinegary, brown sugar, yeast, some apple notes, malts, bready mouthfeel. Tasty stuff. 7-3-7-4-15 04/17/2009

Bottle at ZBF 2009, Sint-Niklaas, Belgium
Hazy, blond body with a white, creamy head. Aroma of german hops, citrus, caramel. Very well balanced and complex flavour. Moderately bitter (hops), moderately sweet (caramel) flavour: quite intense. Smooth saison with a nice caramel touch. Lovely.

Bottle thanks to bu11zeye. Marked 4/28/07. ours with a large, fluffy, off-white head. Aroma of dates, raisins, booze, chocolate, candi sugar, dark cherry and sherry. Taste is sherry, chocolate, cherry, and rum-raisin ice cream. Creamy mouthfeel and light carbonation.

Bottle, 5%. Yeasty and slightly spicy aroma. Hazy yellow colour. Small white head. The flavour is slightly spicy, coriander mostly, but mild.

75 cL bottle. Pours cloudy yellow with a small white head. Mild fruity and yeasty aroma. Medium dry and slight malty flavoured with a light bitterness showing through. Bitter and dry base flavour with a light fruity note into the far finish.

Bottle thanks to bu11zeye, marked best before 2010. A gusher. Pours with a huge white head over a hazed yellow body. Aroma is sweet with honey, apple, corn and pepper. Taste is estery with a sort of grainy sweetness, apple, spice and a very dry finish. Small but persistent bubbles.

Sampled at Zythos 2009. Or capstan full strength as I called it. Cloudy, brown/ruby, thin beige head. Some good dark fruits, ruby fruits, decent sting on the finish. Nice fruits, decent winter beer.

Gushing to fully muddy yellow-mustard beer with fluffy, dirty-ochre head. Very spicy and dry EU-hops nose, speciality grain, straw. Bit meaty ester over again grain juice, like a health drink, vita malz, perfumed. Fully grist-slick, like not fermented out. Seems... unfinished, somehow. Gushing means lack of control.

Bottled (8.3 % ABV, thanks omhper). Reddish amber colour, mediumsized beige head, that leaves nice lace. Aroma is fruity hops, grass and lots of spices. Rather complex. Lively beer too, open carefully. Flavour is spices, alcohol, fruits and some mild notes of yeast. Sour berries is also there. Yeast and toffeeish notes as the yeast is poured in. Yeast also makes the beer lots more smooth.

Pours dark, hazy orange with a large and lively head. Spicy, yeasty orange aroma. Flavour is spicy and has lemon zest and oranges. It’s nice to have a dark Belgian strong ale that is less sweet and more dry.
