Description
The brewery started with the first brews in 1995 and brought the first beers to the market in 1999. The brewers work according to traditional brewing methods to produce distinctive beers from the noble raw materials of barley malt, hops, water and yeast. The quality of the products is guaranteed by modern equipment in constant evolution and systematic analyzes of every brew in the laboratories of the Abbey Notre Dame d'Orval.

Tap at CML fontainas . Pours clear amber, good white head . Smell is sweet and grainy. Thick and intense . More sharp than other BW’s , as well . Taste is also nice and thick, buttery , malty , with some green hops aspects, withoud being to bitter . Some sweet , almost vanilla ( not vanilla ) Character . Still rather easy drinkable . Light metallic features . Very nice, fleshy aftertaste . Quite balanced

Dark red-chestnut color, with creamy head. Mild aroma of dark malts, very light sourness and ashes.
Caramelized malts, moderate residual sweetness, a bit too much ashes that increase the bitterness. Unbalanced; crossover Belgian Ale and Stout.

Bottle (as a gift). Pours golden with off-white head. The head stays. Aroma is fruits, citrus, currants, yeast and some alcohol. Flavor is sweet, citrus, yeast, malt, currants. Finish is dry fruity bitter. Overall: nice brew.

Sainte-Hélènes wheat beer, with thick, creamy, regular, stable, snow white head and golden blonde colour with dusty yeast particles, cloudy ochre with deposit. Obvious wheat in the nose, flowers, green apple, soap, unripe melon, sour milk, lemon zest, abbey cheese, coriander, earth, sherry, hay - not unlike a saison. Subdued fruity, very wheaty taste, pretty strong carbo, dry and light sourish, some coriander but fortunately not exaggerated as is often the case in this style, light finish with very vague, brief hoppiness. Special witbier, like many other Wallonian wheat beers quite far away from the Hoegaarden standard; remarkably, the brewer advises 10 - 12° C as the serving temperature, so cellar temperature - I imagine most typical witbier drinkers prefer their ’blancheke’ well below that...

Newish Belgian-style barley wine with thin, beige, creamy head and hazy bronze colour with protein flakes floating around. Complex fruity aroma of chocolate liqueur, coffee grounds, honey, cognac, hazelnuts, pepper, coriander, dried orange peel. Spicy taste with agreeable, soft malt sweetness, some pear and honey, bit powdery mouthfeel, and, as can be expected from the style, warming brandy-like alcohol in the finish along with herbal hops. Very pleasant.

33 cl. bottle @ home. Procured from Willems en Zoon. Dark amber brown, quickly fading tanned head. Nose is huge overripe dark fruits in a very Belgian way, boozy overripe dark fruits, caramel, yeasty, sweet. Fizzy body. Woody, leaves, oak, yeast, overripe dark fruits fermenting into alcohol, thick caramel, spices, leaves, bit empty in the back; Tad sparkling. Touch above average, pleasant, good stuff.

Bottle, 7.5%. Hazy dark amber with smal tan head. Aroma is malt, brett?, caramel, mint, yeast, fruit and hop. Flavour is malt, caramel, yeast, medium sweet, little mint, little brett, little dry, medium bitter, hop and notes of herbs.
