We’re Crux Fermentation Project— housed in a former AAMCO Transmission Plant and inspired by our location right in the heart of Bend, Oregon. Our brewery is a one-of-a-kind, built for non-traditional brewing methods like decoction mashing, open fermentation and barrel aging, and for leveraging the limitless possibilities that wild yeast strains and experimental hops present.

Tap at Crux, Bend, 23/05/13 - listed as 8% ABV. Lightly hazed pale blonde with a thin off white head. Nose is citrus, bitter orange, hops, caramel, light sugar. Taste comprises lemon zest, orange pith, light grapefruit, hops. Medium bodied, fine carbonation, light hop bitterness in the finish. Drinkable but rather lacking for a DIPA, not enough depth to the flavours, a little washed out, simply failed to deliver.

Tap at the brewery, 23/05/13. Lightly hazed chestnut brown with a thin beige head. Nose is dark malt, dark toffee, sugars, light smoke. Taste comprises a big smokey kick, peat, caramel, toffee, sugars. Medium bodied, fine carbonation, light smokey note in the finish. Not a fan of Scotch/Scottish ales, if such a thing really exists, but the peaty smokey gig amidst this one made it enjoyable.

On tap at Apex, pours a clear golden with a small white head. Aroma of Belgian yeast, dry rustic qualities and some funk. Flavour of rustic notes, Belgian yeast and a bit of candied sugar. Not authentic in any way - very US-tasting. Still, very drinkable and flavourful enough - just not my type of saison.

On tap at Apex, pours a cloudy pale golden yellow with a small white head. Aroma of oranges, dried leaves and some residual sugars. Flavour brings out resinous and fruity hops, dry leaves and some residual sugars from the malt. Not the most refined IIPA, with all kinds of jagged edges. Far inferior to the Outcast IPA, but still decent.

On tap at Apex, pours a cloudy pale golden yellow with a small white head. Aroma of dry herbally, skunky hops, and some dry funky biscuity malts. Flavour brings out strong piney and herbal hops, a bit of pot and some funky biscuity malts. A dry, thirst-quenching and highly drinkable blonde IPA. Extremely well-made.

Draft at Churchkey for CBC. Poured a golden copper color, clear with a small white head. Aroma is plenty of sweet fruit notes, malts, and some sold citrus notes. Flavor was boozy fruit notes, citrus characters, malts. This was a touch hot for me - too much booze. Had it been a bit more balanced, the citrus notes along with the fruit would have been amazing.
