Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle shared at RBBWG 2023. Light golden colored, small white head. Aroma is farmyard, sweet floral notes, citrus peel notes, soft sourish hints. Flavor is similar: super complex but everything incredibly balanced, soft and smooth. SARA provides once more. This is incredible.

Pours slightly unclear blonde. Small white head. Scent is fresh, spicy phenols, brett, oak, very full and pleasant. Very inviting ! Taste is full, tart, refreshing, oak and brett in perfect balance. Nice phenolic saison profile. Slightly fruity even. Quite damn lovely !

Clear beige blond beer, small creamy white head, a little stable, a bit adhesive. Aroma: very funky, fruity, brett, floral, sourish impression, a bit dirty. MF: ok carbon, medium body. Taste: nice, fruity start, pleasant acidity, lemony, pretty bitter, tannins, earthy. Aftertaste: dry, sourish, fruity, bitter, dry, clean acidity, funky, yeasty, esters.

Poured from a 750 ml bottle. Aroma is fruity forward with nice orange and guava notes. Hints of lemon and green grapes. Light grain and alcohol notes. Pours a slightly hazy, yellow-gold, with a medium sized, medium thick, white head that recedes steadily to a small film that lingers on the edges. Light lacing and faint legs. Flavor is a bit acidic with light sweetness and light grain notes. Medium light bitterness and light alcohol notes. Fairly strong orange notes and lighter guava with hints of lemon and tropical citrus. Hints of herbal, spicy phenolics. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid fruited saison. Nice fruit notes with complimentary fermentation characteristics. Light, balanced acidity and balanced alcohol notes. Easy drinking and enjoyable.

Poured from a 750 ml bottle. Aroma is pure SARA - stonefruit, lemon, green grapes and hints of herbal, earthy phenolics. Light grain notes and hints of oak. Hints of alcohol. Pours a slightly hazy, pale golden color with a medium sized, thick, pillowy, white head that recedes steadily to a small film that lingers. Medium lacing and faint legs. Flavor is slightly sweet with a light acidity and light grain notes. Medium low bitterness and light alcohol notes. Quite of bit of stone fruit, lemon and green grape notes from the fermentation with hints of herbal, earthy phenolics. Hints of grassy hop notes and oak in the finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid SARA saison. Classic SARA fermentation profile with nice fruity notes that open up in the flavor as it warms. Slightly more acidic than I would prefer, but not bad at all. Light malt profile allowing the fermentation profile to shine. Complimentary oak and hop notes.

Poured from a 750 ml bottle. Aroma is fruity and very watermelon forward with hints of citrus and green grapes. Light grain notes and hints of alcohol. Pours a somewhat clear, golden color with a medium sized, medium thick, white head that recedes quickly to the edges where it lingers. Light lacing and faint legs. Flavor has a light acidity with a light sweetness and hints of grain. Medium low bitterness and light alcohol notes. Moderately watermelon notes with lighter notes of lemon and green grapes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a decent saison but definitely not a favorite of mine from SARA. I've recently come to realize that I prefer the unfruited saisons as I get more of the SARA funk. Watermelon notes is great in the aroma, but a bit less bright and more muted in the flavor. A bit of a watery acidic note that lingers in the finish, but it's not too strong.

Poured from a 750 ml bottle. Aroma has a medium light herbal and grassy hop note. Light SARA funk with green grapes and citrus. Hints of oak. Light grain notes and hints of alcohol. Pours a slightly hazy, yellow-gold with a medium large, thick, pillowy, white head that recedes slowly to a small film that lingers. Light lacing and faint legs. Flavor has a light sweetness and hint of acidity with light grain notes. Fairly strong bitterness and light alcohol notes. Moderate green grape, citrus and grass hop notes. A bit of a slick, soapy, bitter, harsh note in the finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, this is a big whiff for me from SARA. I usually love hoppy saisons, but this one fails the test for me. It's super bitter and doesn't have enough sweetness and malt character to carry the harsh bitterness that's found in the finish.

Pours a slightly hazy, pale, yellow-gold with a medium small, moderately thick, white head that recedes quickly to the edges where it lingers for a bit. Light lacing and faint legs. Flavor is slightly sweet with low acidity, slightly sharp, with light grain notes. Medium low bitterness and light alcohol notes. Medium low nectarine notes with lighter citrus and green grape notes. Light oak notes. Hints of peppery phenolics notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a decent fruited saison. A touch in the acidic side, but the fruit notes help counteract the acidity. Decent SARA funk.

Poured from a 16 oz can dated October 24, 2023. Aroma is hop forward with lots of tropical fruit and citrus notes - passion fruit, guava, grapefruit and pineapple. Lighter dank, resin notes. Light cracker malt notes and faint alcohol notes. Pours a hazy, golden orange color with a medium large, thick, pillowy, white head that recedes slowly to a small film that lingers. Medium amounts of lacing and faint legs. Flavor is somewhat sweet with light cracker malt notes. Moderately strong bitterness and light alcohol notes. Fairly strong, fruity hop notes with lots of passion fruit, guava and pineapple. Lighter tropical citrus, grapefruit and orange notes. Medium light dank, resin notes that linger into the finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid hazy IPA. The hop notes in both the aroma and flavor are nice and fruity with background resin notes that linger into the finish. Balanced sweetness, malt and alcohol notes, and bitterness.
