Description
In het najaar van 2012 kwam Raymond De Saegher op het idee om een kleine hobbybrouwerij op te starten. Vanuit die brouwerij kan men streekproducten uit het Pajottenland promoten, aan foodpairing doen (het juiste bier bij het juiste gerecht), en vooral veel plezier beleven aan het brouwen van artisanaal bier.

Al snel waren er 3 andere kandidaten om het project mee op te starten: Geert Van Dorsselaer, Gert Wauters en Frederiek Bouljon. Hieruit is de naam 4Pajot ontstaan. In april 2013 hebben we voor het eerst samen gebrouwen. Raymond en Frederiek hadden toen al een ruime ervaring als technicus in de bierfermentatie, via een opleiding in COOVI-CERIA in Anderlecht. Gert heeft ervaring als bio-ingenieur. Geert is meer gespecialiseerd in techniek, automatisatie en sinds kort ook als inoxbewerker.

Ons eerste bier was zo lekker! We hebben daarna nog meerdere keren als hobby gebrouwen. Al snel kwam het idee dat we met ons bier naar het grote publiek moeten komen. Op het vlak van wetgeving is dit niet zo eenvoudig: accijnzen, BTW, voedselveiligheid,… We hebben verder vergaderd en in juli 2014 is ons bedrijf officieel van start gegaan. De eerste maanden hebben we veel formaliteiten in orde gebracht en vooral onze brouwerij uitgebouwd. Vandaag beschikken we over een moderne koelkamer, sensorgestuurde temperatuurregeling,…

Wij vonden ons bier nog steeds lekker, en niet alleen wij. Daarom brouwden we bijna elk weekend, maar door familiale en professionele ontplooiingen hebben Fred, Geert en Gert opeenvolgend moeten afhaken. Raymond brouwt nu beroepshalve alleen verder en kan nog steeds beroep doen op hun respectievelijke kennis en ervaring.

Bottle. Color: Hazy amber, white head. Aroma: Fruity grape and gooseberry. Taste: Fruity lemon, Gooseberry, unripe plum and green apple. Much more tartness than expected from the aroma. Oak wood. Very subtle funky. Dry and astringent mouthfeel. Medium body, just below average carbonation. Medium to over medium tartness. Refreshing.

Bottle. Color: Slightly hazy golden, large frothy white head. Aroma: Yeasty, coriander notes, fruity citrus, lemon. Taste: Wheat malt, spicy coriander, green and floral hop, yeasty, fruity orange and orange zest notes and lime hints, floral notes. Dry hopbittery finish. Medium body, average carbonation. Light to moderate sweet, slightly sour, moderate going towards medium bitterness. Stylish Witbier. Fits well with restaurant Les Eleveurs, where we had a stylish meal just over a week ago.

Bottle @ De Cam, Gooik. Hazy golden colour, creamy white foam. Sweet malty notes, a bit herbal, flowery, fruity with bitter notes (witloof?) Very well balanced. Good!

It seems the lambic revival, a specific side effect of the global craft beer revolution, has prompted some of the small – and often somewhat sleepy – ale brewers in the Pajottenland to experiment with their own lambics and geuzes even if they have no further experience in this very peculiar segment of beer production, and 4 Pajot apparently got inspired as well; it remains, however, very unclear to me how 4 Pajot did it – maybe they did brew their own lambic and named it after Gaasbeek (a village less than two miles down the road from where the brewery is located), but my guess is that if this is the case, it was at least combined with other lambic from one or more established lambic producers. From a 37,5 cl bottle. Thin and open, snow white, quickly dissolving head on an initially clear, warm orangey-golden robe, misty with sediment. Aroma of lemon juice, old oak wood, Parmigiano, green plum, old cheese rind, green olives, peach kernels, light barnyard, ferrous spring water, touch of raw horse steak. Tart onset, lemony in a crisp, spritzy way, green gooseberry and green apple impressions, lively carbonation (about right for a geuze), smooth and somewhat vinous mouthfeel; bread-crusty malts under green-fruity esters and fruity lactic acidity, everything remaining supple and elegant. More zestiness and woody tannins in the finish along with cheese-, green olive- and barnyard-like touches of Bretty funk and slight umami, persisting in a drying, woody, sour-fruity finish. This is, in all, quite a good geuze indeed – feels a bit Lindemans-like in its elegance and souplesse and considering the Lindemans brewery is not far away, I am left wondering if this could be the ‘established’ lambic that went in here… And if 4 Pajot actually did do the brewing themselves, then I can only recommend them to continue on this path.

Clear orange beer, big creamy yellowish head, a little stable, a bit adhesive. Aroma: nice, somewhat earthy, herbal, musty, stale, a bit oxidized, orange peel. MF: ok carbon, medium body. Taste: sourish start, lemon juice, bitter touch, spritzy, refreshing, more lemon, earthy, good! Aftertaste: very lemony, sourish, acid burning a little, bitter, not very complex, a hint of vinegar, ok.

Pours very unclear blonde, no head. Scent is full, fruity-perfumy, I wouldn't recognize specifically pear myself, truth be told. Bit earthy. taste is sharp, dry, acidic, loads of fruits. Earthy, pears. Mild lambic underneath. Refreshing, but one dimentionnal.

50cl bottle from JefVerstraete, many thanks! Euro Swap 2/2020. Poured brown in color with a thin white head. Medicinal, Jägermeister herbal nose and flavor. Caramel, some plummy notes, mild wood. Oh so smooth, near full bodied. Fairly sweet, but suits nicely in here. Great!

Spiced Belgian ale made for the 25th wedding anniversary of Johan 'Wanne' Madalijns (the familiar bearded 'face' of De Lambiekstoempers and of Zythos as a whole) with his wife Lieve. Brewed by 4Pajot with cardamom, juniper berries and orange peel. Frothy, snow white, thick and foamy head on a misty, deeply golden beer with apricot tinge and lively sparkling. Aroma of banana peel, moist white pepper, white cardamom seed indeed, bread crust, dry straw, peach, dried orange peel piercing through, grass, dried camomile and - especially when warming up - indeed a clear piney note from the juniper berries, yet without overpowering the rest. Spritzy onset, sharply carbonated with strong minerally effects but still acceptable for a Belgian ale, fruity notes of banana, peach and apricot with a vague pineapple hint, sweetish but not too much so, with a light sourish undertone. Supple bready malt backbone, a tad cereally, slick with a thin honeyish accent of unfermented sugars on top, but quickly shifting to an aromatic, albeit 'dusty' spiciness with perfumey, even somewhat soapy cardamom seed taking the lead initially; bittering orange peel does show up as well, and so does a piney, slightly resinous juniper berry note, all tied together by a floral, softly drying hop bitterness. Some light bready yeasty notes linger at the back. Thoroughly 'Belgian' spice beer, something I do not usually like, but admittedly - and contrary to my expectations if I'm honest - they have been well applied here, clearly present yet not overwhelming as is all too often the case. I normally hate juniper berries in any kind of beverage but in this case they remain very tolerable, though I personally would have toned down a bit on the cardamom, too, as it is clearly the dominant one of the different spices used here. Altogether decent enough - so cheers to Wanne Madalijns and his wife!
