Description
In het najaar van 2012 kwam Raymond De Saegher op het idee om een kleine hobbybrouwerij op te starten. Vanuit die brouwerij kan men streekproducten uit het Pajottenland promoten, aan foodpairing doen (het juiste bier bij het juiste gerecht), en vooral veel plezier beleven aan het brouwen van artisanaal bier.

Al snel waren er 3 andere kandidaten om het project mee op te starten: Geert Van Dorsselaer, Gert Wauters en Frederiek Bouljon. Hieruit is de naam 4Pajot ontstaan. In april 2013 hebben we voor het eerst samen gebrouwen. Raymond en Frederiek hadden toen al een ruime ervaring als technicus in de bierfermentatie, via een opleiding in COOVI-CERIA in Anderlecht. Gert heeft ervaring als bio-ingenieur. Geert is meer gespecialiseerd in techniek, automatisatie en sinds kort ook als inoxbewerker.

Ons eerste bier was zo lekker! We hebben daarna nog meerdere keren als hobby gebrouwen. Al snel kwam het idee dat we met ons bier naar het grote publiek moeten komen. Op het vlak van wetgeving is dit niet zo eenvoudig: accijnzen, BTW, voedselveiligheid,… We hebben verder vergaderd en in juli 2014 is ons bedrijf officieel van start gegaan. De eerste maanden hebben we veel formaliteiten in orde gebracht en vooral onze brouwerij uitgebouwd. Vandaag beschikken we over een moderne koelkamer, sensorgestuurde temperatuurregeling,…

Wij vonden ons bier nog steeds lekker, en niet alleen wij. Daarom brouwden we bijna elk weekend, maar door familiale en professionele ontplooiingen hebben Fred, Geert en Gert opeenvolgend moeten afhaken. Raymond brouwt nu beroepshalve alleen verder en kan nog steeds beroep doen op hun respectievelijke kennis en ervaring.

Bottle, shared by Gurthnar, many thanks. Dark brown color with beige head. Aroma of wood, light dark malt, caramel. Taste, dark malt, wood, medicinal notes, soapy notes.

Shared @ Koelschtrinkers tasting. Smooth mild woody beginning. Very dry with fruity parts. Long dry fruity woody aftertaste. Nice.

Commissioned, very local 4Pajot beer containing 'witloofwortel', chicory root, for extra bitterness. Tasted at Pajot Ale Land festival, thanks Ama Deke for sharing. Snow white, medium thick, cobweb-lacing, irregular head, lightly hazy 'old gold' robe. Aroma of freshly cut red apples, cloves, dry breakfast cereals, banana, green pear, a vague earthy note I guess referring to the chicory, touch of band aid-like phenols. Fruity onset, sweetish apple, banana and pear notes, medium carb, slick and smooth mouthfeel, white-bready, clean and malt sweet with grassy hop bitter finish only very subtly reinforced by an earthy-bitter chicory root accent, strong (almost medicinal) phenols retronasally as well, clear 'band aid', unfortunately. Overly phenolic blonde, with the 'witloofwortel' remaining very discreet, though this is perhaps a good thing...

Belgian strong blonde, an 'edelbier' to use old OBP terms, by this local Pajottenland brewer; sample from the 50 cl bottles typical for this brewer, at Pajot Ale Land festival. Creamy, thick, frothy, snow white, cobweb-lacing head, hazy apricot-golden hue. Aroma of unripe banana, white bread, cooked apples, cloves, dried 'herbes de Provençe', soap. Restrained sweet fruitiness in the onset, banana and apple, medium carbonated with slick, cereally malt body, honeyish residual sugars on top, spicy-phenolic accents, grassy and floral hop bitterish finish, alcohol remaining well hidden; malt and estery sweetness keep prevailing. Easygoing and very thoroughly 'Belgian' in style, a sweet tripel like there are too many around already, but technically decent enough.

Huge thanks to JefVerstraete for that one! Bottle looks really good. Beer in the glass brownish, small head. Fruity malty aroma. Starts dry-malty, roasty, light bitter. Some mild hints of caramel. Finish well balanced, soft-malty, still light roasty. Not bad.

Bottle, thanks JefVerstraete! Hazy deep chestnut with a claret shine, creamy brown head. Berry, sirup, cinnamon, cardemom and all the complex sugars you would like in the aroma. Medium dry, foamy, anise/fennel, sugared licorice, clove, bouquet garni, orangepeel, a hint umami, pleasant in its spices.

Bottle, many thanks JefVerstraete! Brown color with ruby highlight and a beige head. Aroma is anise, star anise, cloves, thyme, chocolate, christmasy! Taste is the same, lots of christmas spices, mint, liquorice, well-balanced. Silky mouthfeel with medium carbonation. Very nice Christmasy brew that doesn't have to hide against the great examples from Belgium!

Wheat beer made for Les Eleveurs, a hotel with restaurant in Halle; longneck bottle from Streekproductencentrum Halle. Inches thick, densely creamy and wheat-enhanced, snow white, foamy and sticky head over initially clear, pale straw blonde beer with fine but vivid strings of sparkling, turning misty and effectively more 'witbier-like' with sediment. Aroma of strong spiciness (not just the classic coriander, but cloves and even star aniseed as well), banana, sweetbread, gypsum, green apple, camomile, baking soda, plaster, grass. Outspoken banana ester sweetishness in the onset, apple- and pear-like impressions, sourish edge continued in the middle by the wheat, minerally notes, slick and medium-carbonated body; spiciness turning quite strong in the end, even a bit wry, cloves, ginger, coriander, adding a not too pleasant bitterness to a grassy hop bitter accent. Banana ester and pale malt sweetishness lingering. Not sure what spices went in here, clearly this is not just the old familiar coriander-curacao-combo, I get a strong clove-like impression as well which ends rather wry, as if this beer's relatively thin body cannot support it well. Out of balance, if technically decent. Not my kind of beer even if I look at it within the boundaries of the old Belgian witbier style.
