Gun Brewery
Microbrewery
in Heathfield,
East Sussex,
England 🏴
Associated Venue: Gun Brewery Saffrons Taproom
Established in 2015
We spent a year refitting the barn, and installing all the equipment ourselves, before selling our first pint in January 2015. In making our beer we aim to tread lightly on our surroundings. We generate much of our own power from a 15kw solar array; heating from a wood powered boiler and our spent grains keep the local livestock happy.
All the water used for brewing comes from our own spring source deep below the organically farmed land. The water is microfiltered and UV treated to ensure its purity without the need for chemicals. It’s delicious and great for brewing.
Five years on from launch, plenty of awards and some 2 million pints later, by 2020 we were a team of 9 and when we started moving fermenters outside, it was obvious that to keep moving forward, we were going to need a bigger boat. We couldn’t expand in our current building, and really didn’t want to move away from the spring water and the farm. Both of which are part of our DNA. So we looked into the idea of actually building Brewery 2.0 from scratch here.
In August 2020 we were granted planning permission and began building in September. All being well, we hope to move in December 2021.

Cask at The Euston Tap, London. A hazy golden/orange/amber coloured pour with a medium white head on top. Sweetish, hoppy, malty, caramel taste and aroma. More like an ESB. Decent enough effort from Gun.

Third of a pint on a flight in the Old Bike Store, Worthing, early evening on 19th July 2025. Clean and clear golden body, white crust. Pleasant enough Pilsner/Helles, mini-malt action gives a slight lift to the mainly hoppy flavours. Certainly had worse UK brewed German style beers.

Keg draught at the Hope & Ruin, Brighton. Light gold, clear with a very small uneven film of white head and decent lacing. Some citrus on the nose, many sweetened lime and orange. Taste is sweet with a nice Hop bite ack which isn't too bitter but keeps the balance. Surprisingly dry little finish. Light body, heavy carbonation. Not very exciting but all in all its a decent enough composition.

Draft from Ninkaci, Eastbourne. Poured a clear yellow golden colour with a lasting frothy white head. The aroma is grainy, light citrus. The flavour is moderate bitter and sweet, with a.fresh, crisp, juicy tutti fruitti tropical citrus, light toffee, light hop bitter palate. Medium to light bodied with average carbonation.

Cask at the Southampton Arms, London on St George’s Day, 2025. Hazy amber with shallow off-white foam and full lacing. Lush aroma of earthy pungency, spiciness and maltiness. Citrus peel and tangy fruits in-mouth. Citrus zest dominates the finish. Smooth mouthfeel and plenty of body.

330ml can. Slightly hazy brown, moderate sized foamy off-white head, good retention. Aroma of toffee, chocolate, grass. Taste is very malty with the toffee notes coming through well, some light roast, chocolate, dried fruits and flora. As mentioned in previous reviews it tastes closer to a mild. Quite tasty regardless.

330ml can. A very pale yellow with small white soap sud head. Aroma of perfumy lemon, lime with a pale malt background. Taste is also quite simple with sharp citrus notes, grains, quite sweet, a touch of resin in the finish. Light bodied, moderate carbonation, quite dry on the palate. It's ok.
