Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

750ml bottle. Pours a clear red with a thin, fizzy, short lived, pink head that leaves spotty lacing. Sweet fruity aroma of strawberry, cherry, apple, barnyard funk and red wine. Sweet fruity flavour of tart apple, strawberry, cherry, red grape skins, vinegar and Brett in a dry, acidic finish. Medium body with a sticky texture and lively carbonation. Complex and refreshing. Excellent.

750ml bottle. Pours a hazy pale gold with lots of sediment and a thin, fizzy, short lived, white head that fully dissipates. Aroma of barnyard, funky yeast and red apple skins. Sweet fruity flavour of baked red apple, funky yeast and light alcohol in a crisp, dry, tart, acidic finish. Medium body with a slick texture and average carbonation. Juicy, with some complexity. Very nice.

750ml shared with Phill @ Matt's new place. Appearance: hazy peachy with a white head. Aroma: smells like a grapefruit to me that somehow can be split into plums skin, funk, and grapes must. Taste: along the same lines, very bubbly that makes it a bit watery. Overall: very interesting and unusual.

750mL bottle, pours a cloudy orange with a small white head. Aroma is quite strong, with lots of strong vinous notes, somewhat abrasive perfumey floral notes, and crisp apple skins. Flavour is very fruity, with lots of dark plums, perfumey floral notes, light vinous notes, and some crisp apple skins. Doesn't really seem that cidery with all the other stuff in here. The booze is certainly felt, leaving a somewhat abrasive, perfumey, moderately acidic finish. Good, but not entirely cohesive.

(750ml bottle from the cidery webshop) Pours clear bright gold with rapidly dissipating white bubbles. Aroma of rich crabapple flesh, apricot, sweet grape, pale oranges, light volatile acidity, herbal barnyard-y funk profile that's a bit lambic-adjacent actually. Flavour is tart with a bittersweet edge, rather wine-like really, white grape, rich juicy crabapple, raisins, something stone fruit between apricot and yellow plum but leaning to the former as it warms, mineral but not really crisp with smooth well-integrated tannins, very light acetic acid, some citrus pith, soft balanced funk. Light body, slick, above average bottle conditioned carb. Lovely stuff, excellent complex apple cider. The shame of it is that after drinking half the bottle and putting the rest in the fridge with a champagne cork for 4 hours, it seems like it flash-oxidized to death. The rest of the bottle was trash, basically moderately lactic tart lemon-apple juice with a few bitters, no complexity, nothing at all really. Quite unfortunate, I've never had a bottle from Revel show anything like that instability with a little air, especially sealed and chilled. Rating for the initial fraction.

A lightly hazed blonde cider with aroma of tart apples, light Brett, light Curaçao, very nice. In mouth, a nice sweet fruity mix tart apples, light Brett, light lactic notes, light grapeskin, pleasant. On tap at Dominion City Brewing.
