Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

(750ml bottle from the cidery webshop) Pours clear straw yellow with a small but stable white head without lace. Aroma is pale oranges, lightly sugared lemons, underripe nectarine and apricot, a little cripsy apple of course, lightly funky, bright acidity. Flavour is moderate plus tart, citric and a little lactic, bright lemon, apricot, yellow plum, unripe pineapple, light tannins, just a little funk, tart apple into the finish, lactic and tingling acetic acid, barest hint of sweetness. Fairly long finish despite some minerality. Light to medium body, bright bottle-conditioned carbonation. One of the brighter and more tropical all-apple ciders from Revel. I enjoyed this one a lot, nice balance of acidity...quenching without being sour.

Pale greenish colour. Hazy. Tart. Appley. Some nectarines in there as well. It's decent, but probably has more tartness than I'd prefer.

750mL bottle, pours a clear golden with a small white head. Aroma is full of lavender, cinnamon apple pie, and strawberry — fairly dry. Flavour is dry but bright, with lavender, cinnamon apple, gentle funk, and a hint of plums. Tart, dry, gently acidic and floral finish. The adjuncts work well together. Very good.

750ml shared with Phill @ Ryan's. Appearance: hazy golden with a weak white head. Aroma: nice combo of lambic funk and cider, quite complex. Taste: bubbly, tannins, funk, some fermented apples. Flavour is more on the lambic side with a bubbly body being on the cider side. In the deep aftertaste is where more apples are coming. Overall: very nice.

Poured from 750mL bottle. Hazy orangey gold with small white head. Quite funky, especially on the nose, gentle crabapple, some tannins. Wouldn't classify this as a perry, but whatever it is, quite nice.

500mL bottle, pours a clear blonde with a small white head. Aroma brings out lots of wild yeast, followed by buttery rum barrels and a bit of toffee. Flavour is quite dry, yet complex and multi-dimensional, with big wild yeast, plenty of funk, lots of buttery rum, some booze, and funky crisp apple skins. The funk goes well with the rum, and the whole thing finishes dry enough. Very good.

Pale, slight acidity, lots of green apple to this. There's a decent apple, and some sweetish rum, and bit tannic.
