Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

(500ml bottle from the Revel webshop) Lightly hazed deep gold pour with a small white head that fades with spotty lace. Aroma is surprisingly vinous, white wine meets perry with just some sweeter undertones of pineapple, musky complex funk, some mixed pit fruit sweetness. Flavour is quite acidic and very pineapple-forward, an odd mix of the flavour of ripe pineapple with the tartness of unripe; there’s a touch of white wine vinegar about it, dusty yeast, light funk, lemon juice, some perry residual sweetness pops out as you adapt to the acidity, helping ‘dry’ the finish out a touch. Finish is still lactic tart though, with loads of fresh pineapple into the aftertaste. Light to medium bodied, slightly slick, quite softly carbonated. Unique stuff, I wasn't expecting a perry/saison to be the most acidic Revel bottling I've tried but there you have it. Rather enjoyable flavours though I'd have dialled the acid back a touch. Interestingly, pairing with oysters helped draw down the acidity and push pineapple forward.

750mL bottle, pours a clear blonde with a medium white head. Aroma brings out a wonderful barnyard funk upfront, crisp apple skins, and some horse blanket. Flavour is bone dry, with lots of horse blanket, barnyard funk, tart apple core, champagne-like effervescence, and crisp apple skins. Bone dry, highly carbonated, and funky. Excellent.

750ml @ Matt's new place. Appearance: cloudy blonde, looks like moonshine. Aroma: botanicals, barrel, fermented pears. Taste: along the same lines. Overall: quite pleasant.

750mL bottle, pours a hazy blonde with almost no head. Aroma is very acidic, with tons of apple skins, a bit of white grape skins, and some floral notes. Flavour is nicely complex, with lots of funky apple skins, light grape skins, and wildflower notes. Fairly dry, with some apple/pear core on the finish. Very good.

Slight haze green-yellow. Tart, earthy, nice perry note, some barrel, vinous accents and light florals. Great complexity. This is excellent. Rich honeyish finish.

Reddish color and almost no head. Acidic and sour fruity. Strawberries, spicy, faint balsamico vinegar. Dry.

(Draught at Muted Horn, Berlin, 29 July 2022) Hazy yellow colour with brief head. Fruity, sourish nose with notes of pears, citrus and green apples. Fruity, slightly tart taste with pears, lemon, green apples, grass and oak wood. Medium body, dry. Fresh and tasty, with a refreshing, slightly woody, acidity. Very nice.

(750ml bottle from the cidery webshop) Pours clear deep gold with a tiny fizzing of bubbles, effectively still. Aroma is truly like apple sherry, there's a hint of candied pale cherries, lots of white wine with notes of kiwi/lychee and citrus, balanced oak, apple skins, a certain saline minerality. Flavour is definitely dry sherry, round and oak-laden, super-vinous crisp white wine and surprisingly bright apple, touches of tropical florals like lychee join the gooseberry from the Sauv Blanc and a hint of citrus, nice salinity, smooth tannins from the fruit skins, touches of acidity towards the finish and into the aftertaste which has a nice lemony herbal touch (the lemon verbena that wasn't on the label...) that mixes with tannin for a very gentle bitterness. Slight alcohol warmth. Medium-plus body, quite oily, still. Fascinating beverage, complex and completely unexpected presentation of cider (with wine). The sherry-type notes are well-accented by the apple characteristics and tannins, the Sauv Blanc is young and brightly expressive, and the salinity brings things into balance. Beautiful.
