Hier brouwen we onze eigen lambieken op traditionele wijze en laten deze spontaan vergisten en rijpen op Franse eikenhouten vaten.
Van deze lambieken van verschillende jaargangen vervaardigen we de
"Oude Geuze Brett-Elle"

Bottle shared in Kuala Lumpur. Poured a hazy light golden colour with a thin broken white head. The aroma is yeasty, tropical citrus, dry mineral,. The flavour is moderate sour, with a light, crisp, tart citrus, yeasty, dry woody, oaky palate. Medium bodied with soft carbonation.

Bottle: Poured an amber/orangey color lambic with a large foamy head with good retention and some lacing. Aroma of funky yeast notes with light barnyard notes and plenty go oak is pretty enticing. Taste is also a great mix of funky barn yard notes with wild yeast, dry Brett green apples with plenty of oak notes. Body is fuller then average with excellent carbonation. Excellent and complex lambic.

9-4-8-5-17 Bottle, one year after bottling. Pours hazy orange, with an enormous creamy head. Aroma is tart fruity brett with white berries and light wooden notes, as well as citrusy notes, dusty cellar, tannins and barnyard. Medium to full body, with average carbonation. Flavour is tart notes of hay, citrus and bretty notes of berries and apples, as well as barnyard, notes of cellar and wooden notes.

Bottle at home in Hackney - sourced from online. Aged just under two years from bottling. Pours mostly clear peachy gold with a small, fading foamy white head. Lovely aroma, restrained funk. Light-medium sweet flavour with moderate acidity, some lightly juicy citrus fruits, lemon, tangerine, subtle grassy bitterness, sturdy salty bite, a mild vinegar note, background damp wood. Light bodied with quite delicate carbonation. Has a little acetic throat burn in the finish, more citric bite, mild pale wood dryness, a little more salt. Solid lambic overall.

37,5 cl bottle @ home. Bottled 03.05.2018 Aroma has earthy notes and grapefruit. Flavour has grapefruit, earthy notes, orange and some malty notes. Palate is low on CO2. Easy-drinking malty gueuze.

Shared 750 ml green bottle, as Young & Wild Fontan-Elle. Hazy orange colour, lasting white head. Lovely aroma of brettanomyces / farmhouse, lemons, oak and white wine vinegar. Sour flavour, notes of lemons, oak and brett.
