Description
Located in the semi-rural location of Wakes Colne in the borough of Colchester, the brewery was formed in late 2011.
All funding came from the 3 founding directors and their friends and family.
1st February 2012 saw the first brew on the 10 brewers’ barrels (about 1600 litres) kit, with this being the beer that remains our best-seller, namely Colchester No1.

Pigs Ear. Almost opaque dark brown beer. Little pale tan head. Light palate. Very modest carbonation. Mild dark malts, a little tangy. Super mild esters. Dry finish. Inoffensive but somewhat bland.

Pigs Ear. Opaque black beer, little tan head. Super light palate, a little dry. Mild dark malts with traces of dark chocolate, coffee and malty cream. Whisper of spicy bubblegum ester. Dry finish. Standard stuff - done well.

Cask at Pigs Ear BF 2012, London. Pours brown with a creamy, beige head. Character of dry chocolate, dirt. Light bodied with fine carbonation. Bitter baking cocoa in the finish. Straight-ahead porter, pretty good.

Chelmsford Beer Festival. Light haze on this gold beer. Residual bubbly white head. Palate is light and dry. A little minerals. Nice dried fruits and citrus leading to orange marmalade bitterness in the dry finish. Decent - nice citrus.

Cask at the The Sun Inn Summer Beer Festival, Kelvedon. Clear dark red - amber beer, small pale tan head. Smooth palate with nice fine carbonation. Good malt base. Mildly sour fruits and dried fruits. Smooth finish. Nice fruity semi tart beer.

Cask at the The Sun Inn Summer Beer Festival, Kelvedon. Hazy gold beer, little suddy white head. Light dry palate. Some soapy notes here - managed to swirl and agitate the worst of it off. What’s left is a dry malt with dry bitter hops that taste of grapefruit and orange. Dry finish. 2.5

Very hazy gold beer, tidy white head. Light and minerally crisp palate. Clean pale malt, semi dry. Light banana ester. Floral yeast and super light citrus. Dry minerally finish. Not bad.

Cask@The Pembury Tavern, London. Amber colour, not much head. Aroma is wood, caramel, some earth and mild yeastyness. Flavour is caramel, fruits, wood and mild floral notes as well. Quite pleasant bitter.
