Bottle. Cloudy pale yellow color. Aroma of dusty, peppery attic corners and sweaty animals. Taste is funky and dusty overripe lemons. Very tasty.

75cl bottle courtesy of and shared with Tderoeck. Couleur reste assez trouble, presque boueuse nettement plus que la version de base, léger dorée, col blanc. Arôme fruité, agrumes, tropical rétro épicé avec une belle note de levure. Palais est houblonné assez imposant, agrumes, malté avec un caractère pils, fruité et finement houblonné qui arrive sur la fin. Ressent quasi une fine pointe poivrée.

Thanks to tderoeck, enjoyed at his place with tderoeck, sebletitje, 77ships and omgrich. Extra hoppy version of the regular Congress Street which we tasted next to it. Looks exactly the same: stable, frothy, hops-enhanced, snow white, creamy head, cloudy peach yellow blonde colour. Very aromatic, spruce, lemon zest, flowers, lime, hemp, peach, pineapple, soap, very close to the regular one but more aromatic still and a bit more ’lush’ and exotic. Same for the flavour: it has the same ’clean’ but lively fruitiness in onset, perhaps a bit more pineapple flavour but difficult to say, same degree of carbonation (fizzy but not too much), same light bready malt profile, but a more complex, more outspoken and more bittering hoppiness, with a bit more earthiness and yeastiness in the finish. This one has a tad more grapefruit hoppiness and more fragrance, but I cannot say this automatically makes it better than the regular Congress Street: to me, both are on a par as being very elegant, refined, fragrant IPAs of world class quality. Hugely enjoyed both - apparently the Trillium hype is well-deserved.

Thanks to tderoeck. IPA with stable, lacing, creamy, snow white head and cloudy, peach yellow blonde colour. Aroma of lemon zest, hemp, spruce shoots, apricot, field flowers, old cheese, buttermilk (probably still diacetyl as the bottle is apparently very young), grapefruit flesh; vividly fruity taste, apricot, pineapple but ’clean’ as most American IPAs, bit fizzy but not overcarbonated, light bready maltiness, early and very long, complex, refined hop profile, bittering and very aromatic, piney, citrussy, gentle and drying. Very elegant, fragrant, ethereal IPA.

American farmhouse ale, courtesy of tderoeck. Very thick, rocky, stable, clearly hops-enhanced, thickly lacing, snow white head over a light hazy, beautifully pale yellow blonde beer. Wonderfully fragrant aroma of lemon peel, chamomille, orange peel, white pepper, pine needles, lavender, white bread, passionfruit, white grapes, old cheese, pear. Vivid, fruity but ’clean’ onset, melon, pineapple, pear, creamy mouthfeel with just the right amount of carbonation, sweetish bready and lightly honeyish maltiness, slightly yeasty, dry finish, complexely hoppy, floral, bit citrussy, bit piney with some of the exotic fruitiness coming through. Saisons pop up everywhere these days and are not necessarily dry-hopped, but I can accept this one as a very refined example of the style. Great beer.

Bottle split at Jack The Sipper leaves for the FBI again tasting, massive thanks to Trillium pimp Leighton, I look forward to their hop jus more than anything these days, 14/07/15. Lightly hazed orange with a decent off white covering. Nose is earthy hops, dank’o’clock, pine needle, straw, mandarin, light herbal strains. Taste comprises big dank strides, on the turn melon, citric pith, pine resin, grapefruit. Medium bodied, fine carbonation - perfect pitch, big dank wash up at the curtain call.
