Description
Je m'appelle Emanuele Corazzini et j'ai créé NovaBirra en 2008. Passionné de bières artisanales, je suis allé à la rencontre des brasseurs audacieux et innovants de nos régions. C'est à leur contact qu'est née l'idée de proposer des cours de brassage afin de partager mes connaissances de la bière. Au fil des années, j'ai pu faire découvrir notre patrimoine brassicole à de nombreux enthousiastes. Et pour certains, NovaBirra a aidé à la réalisation de leur rêve: créer et commercialiser leur propre bière!
Depuis 2011, je brasse mes propres bières: Big Mama Stout, Big Nose Triple, Holy IPA et Seed of the New Grace.
Je soutiens également des projets de personnes ayant suivis mes cours de brassage.

Towering yellow-brown head, very stable over deep dark brown beer with a ruby sheen. Chocolate, cocoa, dusty & flowery hops, resin. Bitterish to bitter, very (aromatic) hoppy. Again resiny, piney even. Background displays still a lot of sweetness, as a mix of plain dark and milkchocolate. Certain fruitiness. Very well bodied, slick to viscous. Difficult to pinpoint, but this beer hints at hidden qualities and depths. Probably the excellent balance (for such a serious stout) makes it so deceptively easy. If I have to judge according to the fruitflies it attracts, Mama is a true champion...

75 cl. bottle sampled @ GBF 2012 // dark brown, med, tanned head // smell is a bit weak and almost watery, cocao, light coffee, sweeter malts, milk chocolate // tastes of sweet roasted malts, lots of nuts in here which is quite an original and lovely touch, bitering towards the end, Belg. yeast, plenty of cocoa which is nicely blended with some dark fruits, milk chocolate, lightly creamy, sweeter coffee & light bitterness (hop) in the finish // the whole is unfortunately a bit too carbonated distracting a bit from the whole // this is not bad but competition is fierce within the style and this doesn’t play with the big boys

Bottle. Black with light brown/tan head. Nose/taste of sweet chocolate, vanilla, lightly roasted grains and lactose. Finishes lactose/toasted black malt. Medium body.

Little cloudy brown to black beer, big creamy head, stable and adhesive leaving a nice lacing in the glass. Aroma: mocha, caramel, dried fruits, cocoa powder, dark chocolate. MF: soft carbon, full body, creamy velvet like texture. Taste: dark chocolate, mocha, caramel, some dried fruits, a sweet touch, toast, some creamed coffee. Aftertaste: mocha, little bitter, dark chocolate, gentle hoppy ending.

Snifter samples during the Big Mama Stout release party @ Bier Circus, Brussels. Served alongside chocolate sprakled with cacao and another with ginger. Yummy. Couleur brune foncée pouvant aussi aller vers l’acajou, laissant apparaître un col épais allant vers le foncé voire café au lait. Ce dernier est tenace voire crémeux. Arôme de malt grillé sur une pointe de torréfié, le chocolat reste discret et se fait plus présent une fois que la bière se réchauffe. Houblon reste également discret, procurant un ajout fleuri. En bouche, malt grillé, choco avec il faut le dire, un cacao qui vient couvrir le fond de la gorge après chaque gorgée. Bière un peu trop froide à mon goût et qui masque un peu la force des malts et surtout du chocolat. Le tout suit un profile de fin de bouche sec et grains. Cela est balancé par une brève et agréable amertume venant soit et en partie du chocolat et des houblons. Le Willamette rajoute ce profile fleuri/fruité similaire à un Fuggle de stout anglais tandis que le Summit donne ce profile amer profitant bien de son taux d’alpha acide et reste en accord avec ce stout qui au fini allie le style US et le profile belge. Bière encore jeune, à revisiter dans qcq mois.

Bottle 750ml.Clear dark red brown colour with a large, frothy, good lacing, mostly to fully lasting, beige head. Aroma is moderate to heavy malty, roasted, caramel, choclate. leather. Flavour is moderate to heavy sweet and moderate bitter with a long duration. Body is medium, texture is oily, carbonation is soft. [20120128]

Bottle at Vilvordia. Very dark maroon color, large beige head with great retention and solid lacing. Aroma of milk chocolate and cocoa powder. Taste is coffee and dark chocolate. Light body. Nice.

75 cl bottle. Pours dark brown with a huge tan head. Aroma is dark roasted malty and light fruity. Crisp hoppy, mild yeasty, dark liqourice malty. Lasting bitter and dark roasted malty flavoured finish.

Bottle 75 cl. Pours an opaque black with a creamy beige head. Dark pruney fruit in the nose. Medium body, some vanilla, dark dried fruit while the dark malts are fairly subdued. There’s a slight late tartness. Never bitter though. 030312
