Founded in 1990, Le Bilboquet is one of the first microbreweries in Quebec. Since then, it has never stopped innovating to offer to its consumers a wide variety of exceptional beers. Le Bilboquet specializes in the production of craft beers, including unfiltered and aged beers.

Thick, rich and decadent - this is a beast of a Scotch Ale (actually an imperial, if that is an actual category. Pumping up the alcohol and ingredient list has made this into a Canadian classic. A backbone of very roasty malt supports a super rich taste profile. Thick toffee, dark berries, booze, butter and a hint of chocolate are brought into an extravagant but successful balance. Taste sustains and stays in balance. Not for everyone, but quite an accomplishment!

From the local Metro in Saint Alphonse. Black with a creamy, beige head. Aroma promises licorice, berries, roasted grains. Taste is bitter with licorice sweet undertones. Medium bodied, mild carbonation. Smooth, mildly watery.

Honey aroma with a tinge of molasses. Spices. Taste is sweet the whole way through with lingering honey and coriander. Medium bodied, mild carbonation. Interesting. A bit one dimensional.

Amber with a sudsy, white head. Subdued grapefruit aroma with cereal underneath. Faint caramel over time. Taste is bitter, moderate citric, finishing much the same, although somewhat watery and of modest duration. Medium bodied, moderate carbonation, dry. Ok.

Bottle shared at Hopa. Deep mahogany pour, off-white head. Nose is huge honey, bread notes, burnt sugar, chocolate, sweet booze. Taste is the same with a long, sweet and warm finish. Feels a tad too light, but otherwise pretty awesome.

Dark amber/copper. Bready, biscuity, piney. Good mouth feel, solid carb. Medium bitter, slightly nutty, resinous.

473ml can. Soft bready malts, very light resinous, piney hops. Mouth feel is light and soft, carb is lively. Medium bitter, pine and light caramelized cereals. Pretty mute, hut I can see this being a big deal in 1990 for sure.

Very nice, soft citrus aroma, with some quality cereals. Soft carb, regular mouth feel. The finish is all grains, slightly sweet cereals, and malts, and the hops fall right off, and leave only slight papery, grassiness.

Big aroma of honey and spices and some light citrus. Flavour is very sweet with some interesting cinnamon/ clove notes. Finished slightly sweet with some honey snd yeast. Reminds me of a spicy belgian ale.
