Description
Jem Ham is Cheddar Ales' Head Brewer and Managing Director. Cheddar Ales, he started Cheddar Ales with the intention of making the best real ales in the local area. It began its artisan brewing activities in October 2006 and is based at Winchester Farm on the edge of Cheddar village, near the famous Cheddar Gorge.
We currently have five fermenting vessels, each one capable of holding 21.5 brewery barrels of beer, or around 6,150 pints. This gives us a weekly brewing capacity of around 30,000 pints, which may sound a lot but is certainly 'micro' in terms of the brewing industry. By hand-crafting such relatively small volumes, Cheddar Ales can ensure that character, consistency and quality lie at the heart of all our beers.

Keg @ Cheddar Ales taproom. Pours clear gold, white head. Aroma of cereal grain, malty sweet. Flavour profile is malty sweet, medium bodied, hay with a gentle bitterness. Ok lager overall.

50cl Fles van Dunster Deli. Zwarte kleur, beige kraag. Ruikt heerlijk, flink gebrand, pure chocolade, verse koffie, gebrande noten, smaak is vrij waterig en dun, licht gebrand, iets wrang, bitter. Lichte body.

GBBF Day 2. Cask. Mild hazy gold beer, small bubbly pale cream colour head. Palate is light and semi dry, modest fine carbonation. Light sweet pale malts, whisper of grain. Light floral hops. Not getting any Kiwi hop character. Light semi dry finish. Inoffensive but quite bland.

500ml bottle conditioned (5.5% ABV): BBE June 2023, poured into a vase shapped UK pint glass at home on 20th June, so just in date. No sediment left the bottle so I have a lovely clear mahogany red body in front of me, smooth layer of creamy foam on top, looks a picture. Malty, dry and bitter taste, aroma is subtle with a slight malt esters, but it's come straight out the fridge and is still fairly cold at the moment, so maybe it'll grow in strength as it warms a little. It just got more malty in the nose to be honest.

500ml bottle: BBE September 2023. A gift from a friend, cheers Mike of Somerset. Drank at home on 16th June 2023. No sediment left the bottle, so I got a clear and clean golden pour with a good white crown of foam on top. Malty front to the aroma and taste, tempered by gentle citrusy esters and flavours, pleasant hoppy finish.

Cask-conditioned, at the Bag O'Nails, Bristol, 31 May 2023. Deep golden in colour with a slight, white, head and touch of haziness. Some citrus hop character, sweetish tangerine fruit, biscuity malts and a moderately bitter finish. Good.

Bottle. Rich amber beer with a big tan head. Caramel and light fruity aroma. Caramel and citrus flavor with floral notes. Medium bodied. Good bitterness. Caramel and citrus linger with floral notes and light earth.
