Description
Jem Ham is Cheddar Ales' Head Brewer and Managing Director. Cheddar Ales, he started Cheddar Ales with the intention of making the best real ales in the local area. It began its artisan brewing activities in October 2006 and is based at Winchester Farm on the edge of Cheddar village, near the famous Cheddar Gorge.

We currently have five fermenting vessels, each one capable of holding 21.5 brewery barrels of beer, or around 6,150 pints. This gives us a weekly brewing capacity of around 30,000 pints, which may sound a lot but is certainly 'micro' in terms of the brewing industry. By hand-crafting such relatively small volumes, Cheddar Ales can ensure that character, consistency and quality lie at the heart of all our beers.

Cask at Cobblestones, Bridgwater. Pours light hazed deep golden with a white cap. Aroma: biscuit malts, orange, lemon, spicy hop. Taste: light to moderate sweet & bitter, semi-dry, citrus, grass spicy hops. Medium body with moderate carbonation. Decent.

Bottle online from The Cheddar Brewery. Pours a clear copper colour with a medium sized creamy off white head. Aromas of toffee, caramel, bread and biscuits. Taste is more toffee and caramel, more bread and biscuits, some peppery spice with a leafy hop bitterness on the finish. Nicely balanced. Full body, fairly low carbonation and smooth oily mouthfeel. Very good above average traditional English Best Bitter.

Cask@The Great British Beer Festival 2022 (Days 1&2) - Fruity and light sweet toasted malty, citrus fruit, light to medium body, bitter hoppy close.

Cask @ Windmill Inn, Portishead. Golden with an extremely light haziness and a thin head. Has a decent stated pale ale texture and taste that’s quite hoppy.

500ml bottle from Gluten Free Beer online. Gluten Free. Bright amber colour, off-white foam head leaving lacing and aroma of citrus, fruity, pine. Taste is malt, caramel, fruity, with some citrus, pine, and resiny hop bitterness. Medium bodied, soft carbonation, dry hoppy bitter finish. Nicely drinkable.

Cask at GBBF '22 day 2, 03/08/22. Golden pour with a decent white cap that dissipates to a swirl. Nose is mellow citric peel, grass, soft malts, tangerine. Taste comprises melon, orange peel, soft malts, light breads, hint of stoned fruit. Medium bodied, soft carbonation, semi drying close splashed with mellow light juice laden hop bitterness. Fine.

500ml bottle. Gluten Free. Golden colour, bubbly white foam head leaving lacing and aroma of citrus, gooseberry, hoppy. Taste is malt, bready, with citrus, grapefruit, gooseberry and tangy bitterness. Medium bodied, soft carbonation, drying citric bitter finish. Nicely drinkable.

Cask at GBBF '22 day 4, 05/08/22. Golden amber with a good sized lasting egg shell white cap. Nose is candied fruit rinds, orange peel, floral notes, grains. Taste comprises orange peel, caramel malts, light bready notes, floral notes, biscuit, Medium bodied, soft carbonation, semi drying close spiked with mellow hop bitterness. Not bad.
