Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Draft at Moeder Lambic Fontainas. Dark slightly purplish brown with a big bubbly light purple head. Aroma of roast, dark chocolate, blueberries coming out with other dark fruit, rye and light caramel notes. Flavour is light moderate sweet and moderate bitter. Light to medium bodied with a watery texture and very soft carbonation.

330ml bottle from L’Abbaye Des Saveurs, Lille. Drunk in the park on a nice warm evening. Pours cloudy pale yellow, thin white head. Aroma is lactic funk. Taste is crisp, lactic with a hint of citrus fruit. Slightly sticky finish. Nicely balanced Berliner.

F: average, not very long lasting, brown. C: completely dark, opaque. A: roasted malt, coffee ground, chocolate, light leather, hint of dark fruits, light smoke, woody. T: malty, chocolate, coffee, cacao, hint of fruits, smoked wood, low bitterness, oily mouthfeel, medium full body, lower carbonation, good balanced beer worth to try, 0,33l bottle from La Cave à Bulles in Paris.

330ml bottle from L’Abbaye des Saveurs, Lille. Pours cloudy orange, good pillowy white head. Aroma is herbal, spicy with dank coffee. Taste is herbal with old coffee dregs and a light chili kick on the finish. No mention of chili anywhere, but I’m definitely gettin something. Not really my go-to style, but I can appreciate it.

(Thx!) Sampled draft @ Tilquin English Beer Festival 2016. Black, mocha head. Nose is thick mocha & massive raspberry, lots of raspberry pits, some jam. Taste is more raspberry with stout as opposed to stout with raspberry. Massive raspberry pits & fruit upfront, massive fruit leading into chocolate, mocha, faint roast. Body is massive raspberry pits & chocolate. Nice one.

(Thx!) Sampled draft @ Tilquin English Beer Festival 2016. Black, little herbal. I am unfamiliar with Génépi, nose is indeed massive alpine herbs, a bit anise & absinth-like for me, spice, extremely so, intense. The alpine herbs are far more muted in the taste, still clearly present but more balanced by mocha, caramel, chocolate & sugar in the background, some cough syrup. Powdery syrup body. Very interesting concepts, works surprisingly well, I can see why some people were put off by this, this is an interesting & fun one, takes some bracing & it needs to be enjoyed on its own terms.

Draft @ Tilquin English Fest ’16, day2. Brune foncée presque noire, col blanc-cassé, le tout reste doré au verre sur fin filament huileux. Arôme est généreux, plein de belles notes de framboise, ici un fruité vrai, pas de jus, note le côté organique terreux et frais, ce dernier parvient même à supplanter les notes de malts qui sont centrées sur un chocolaté et grillé. Palais est plaisant présentant une belle balance entre un malt chargé et un fruité rouge de baies framboise qui apporte une belle fraicheur de bouche tout en gardant un léger côté aigrelet terreux. Belle nouveauté, parfaite en dessert avec du chocolat.

Draft @ Tilquin English Fest ’16, courtesy of and shared with the fine Belgian RB crew. Brune foncée, col fin beige. Arôme au nez axé sur les malts, pointe de lacto en rétro mais arrivant en retrait par rapport aux effluves plus grillées. Palais est malté, fin biscuité, pâle et pointe d’amertume houblonnée. Le côté lactose est assez discret ce qui au final n’est pas mal considérant que nombres de milk stout sont souvent bcp trop douce.
