Formerly know as Brasserie de Saint-Sylvestre, the brewery now uses the 3 Monts brand as their name.

Located in French Flanders, in Saint-Sylvestre-Cappel, 3 MONTS Brewery is a family independent brewery since 1920. The name 3 MONTS comes from the Cassel, Cats, and Récollets hills, an outstanding feature of the local landscape. Passed from father to son since 1920, the brewery today produces beers that evoke the richness of the land and the legendary flemish conviviality. Proud of its origins and heritage, the brewery strives to promote Flemish culture beyond its borders, transmitting values of: • Strength of character • Conviviality • Generosity.

opalescent dark golden colour, huge, dense ecru-ish head; aroma of linden honey, honeycomb toffee, piney, herbal hoppy, yeasty and fruity esters notes; taste is dominted by hoppy bitterness with similar notes to the aroma; really enjoyable one!

Review based on the BJCP2021 guidelines (style 24C: ambrée). Bottle 75 cl - Batch L5204 16:12 (BB: 23/07/26). AROMA: medium-low malt aroma, with a sweet character, and toasty notes. low background esters (candied pear) and slight peppery phenols. complementary medium-low alcohol notes. APPERANCE: deep dark orange to amber color and translucent with orange highlights. Large ivory head, creamy, with very good retention. lace formation. TASTE: medium-low malt flavour (grainy sweet and slight toasty). medium-low to low esters (candied pear), peppery phenols and somewhat boozy alcohol (medium-low). Medium to medium-low bitterness with a dry finish. slight mettalic note. MOUTHFEEL: medium to medium-full body. medium-heigh carbonation. smooth alcoholic warmth. OVERALL: an ok ambree biére de garde.

Review based on the BJCP2021 guidelines (style 25B, super, blonde), Bottle 75 cl - Batch L5163 17:37 (BB: 12/06/26) AROMA: medium-high hop aroma (dried grass) with a slight lemon note. medium-low soft malt background (grainy). APPEARANCE: light yellow colour and crystal clear. medium-high white head, creamy, with good retention. TASTE: similar to the aroma (medium dried grass, slight lemon) and medium-low grainy-soft malt background. medium-high bitterness with a dry and bitter finish. MOUTHFEEL: medium-low body with medium-high carbonation. OVERALL: an ok base beer with what seems oxidized hop notes. lacks fermentation character from saison yeast strains.

24th Dec 2025: 75cl bottle shared with Eric in Eecke. Shouldn't be drinking as I'm ill but it's Christmas Eve so.. there we go.. 🧑‍🎄

15th Dec 2025: Draught @ Flandrinks. Pours a clear gold, white head. Easy-going blonde, with a leisurely Abbaye-style yeast presence (one of 3 Monts' house yeasts) producing a clean, pleasant sweet character, light bitter lick on the finish. Not bad.

Bit bottle from the Low Cost Beer online shop. Pours clear golden with a thick white head. Aromas of bread, light spice and booze. Taste adds light herbal notes. Boozy finish.
