Formerly know as Brasserie de Saint-Sylvestre, the brewery now uses the 3 Monts brand as their name.

Located in French Flanders, in Saint-Sylvestre-Cappel, 3 MONTS Brewery is a family independent brewery since 1920. The name 3 MONTS comes from the Cassel, Cats, and Récollets hills, an outstanding feature of the local landscape. Passed from father to son since 1920, the brewery today produces beers that evoke the richness of the land and the legendary flemish conviviality. Proud of its origins and heritage, the brewery strives to promote Flemish culture beyond its borders, transmitting values of: • Strength of character • Conviviality • Generosity.

Bouteille 750ml. De couleur brune foncée et claire. Nez de grains de céréales rôties, léger de chocolat noir avec des notes de fruits (figues), de houblon floral et d’épices (poivre très doux). Moyenne-mince en bouche avec un pétillement moyen ainsi qu’une texture aux petite notes crémeuses. Notes fruités (petits fruits foncés) avec de traces de fumée de bois lors de l’entrée en bouche auquel se rajoute un goût très rapidement un goût de grains de malt rôtis avec un léger goût de chocolat noir ainsi que quelques traces de pain grillé et de caramel brûlé puis en finale l’on retrouve un léger goût d’alcool aux notes réchauffantes conjointement à une légère amertume asséchante de houblon floral et aux faibles notes épicées (poivre doux). Post-goût moyen, légèrement amer de rôti, léger d’alcool doux et de houblon floral avec des traces de chocolat noir.

RB Odense Official February tasting. Amber with a small white head. Caramel malty aroma with a fruity hint and some earthy yeast. Dry malty flavour with sharp, hot alcohol, a little spice and some dusty yeast

Bottle @ 12.000 Celebration Tasting, Odense. Pours clear amber with a small white head. Caramel, bread, fudge and grain. Medium bodied. Sweet malty. Quite chewy. Pleasant.

Bottle, 75cl corked. As Brassin D’Hiver. A big, off-white head. forms over an almost clear dark golden body. Some lacings left. The aroma is rather spiced and herbal, with toffee-ish maltyness and pale malts. A touch of fruits too. The flavor is pretty much the same, sort of typical BdG, maybe a bit too fruity though. Full body, quite dry. Lasting finish with biscuits, dried fruits and caramel. A quite pleasant one. 130222

Pours clear deep golden/copper with a off-white head. Aroma has notes of malt, caramel, yeast and spices. Taste is medium sweet and light bitter. Body is medium, texture is oily, carbonation is soft.

Tasted in February 2012. Aroma: Strong banana accents. That’s it Appearance: Gold amber, very clear, average rocky head, average lasting. Taste: Attack is warm and round, leaving a strong acidity like a lambic or a Gueuse. Very unpleasant cardboard aftertaste. Might be a bad bottle. But still I’m not a great fan of that type of beer.

Sampled @ PINT Winterbierfestival Gouda 2013. [as Brassin d’Hiver] Clear orange to brown color, small light beige head. Smell malts, some sweetness, lightly alcohol. Taste malts, some sweetness, lightly yeast and herbs or spices. A bit thin texture, ok body, low to medium carbonation.

Aroma is somewhat heavy with floral notes, some ripe fruits and hints of alcohol. Flavour has grain, some gluey notes, grassy hops and hints of fruits. Alcohol on some sips. A disappointment.

Bouteille 330ml. De couleur ambrée-orangée et très légèrement voilée. Nez de grains de malt aux notes rôties et terreuses, léger de caramel avec des notes de sucre brun, de levures fruitée, d’épices (poivre), de houblon herbeux et d’alcool. Moyenne-mince en bouche avec un pétillement moyen ainsi qu’une texture aux notes huileuses. Notes de levures fruitées (agrumes, traces de poires) et épicées (poivre) lors l’entrée en bouche rapidement suivi d’un goût de grains de malt sucrés, moyen de caramel aux notes auquel se rajoute une légère amertume de houblon herbeux avec un moyen goût d’alcool jusqu’en finale. Post-goût moyen et sec, légèrement amer d’alcool, léger de grains sucrés et léger de houblon herbeux.
