Formerly know as Brasserie de Saint-Sylvestre, the brewery now uses the 3 Monts brand as their name.
Located in French Flanders, in Saint-Sylvestre-Cappel, 3 MONTS Brewery is a family independent brewery since 1920. The name 3 MONTS comes from the Cassel, Cats, and Récollets hills, an outstanding feature of the local landscape. Passed from father to son since 1920, the brewery today produces beers that evoke the richness of the land and the legendary flemish conviviality. Love this beer! From prying off the wire and popping the cork, the aroma comes on strong. Two finger head, and beautiful flavor of bread and grass. Soft carbonation and lingering bitterness on the palate. A perfect bottle to sip on a hot summer’s day....

Bouteille 750ml. 2010, veillie 2 ans. Couleur dorée, mousse blanche laissant un anneau et une faible dentelle au verre. Arôme de citron, un peu d’alcool. Goût d’agrumes, de grains et de pomme rappellant un cidre. Texture un peu liquoreuse avec une carbonation élevée.

Bouteille 750ml portant le nom "3 Monts Grande Réserve" et titrant 10%. De couleur ambrée-orange et claire. Nez de levures fruitées (agrumes, notes d’abricots) aux notes épicées (coriandre, traces de muscade), de grains de malt pâle légèrement sucrés, léger de pain et de houblon herbeux ainsi que des notes de miel. Moyennement ronde en bouche avec un pétillement moyen ainsi qu’une texture aux notes crémeuses et aux faibles traces sirupeuses. Moyen goût de levures fruitées (agrumes, faibles notes d’abricots et traces de poires) aux nots épicées (notes de muscades, traces de poivre et de coriandre) accompagné d’un léger goût de grains de malt lors de l’entrée en bouche auquel se rajoute rapidement un moyen goût de pain avec des notes de miel et quelques traces de biscuits. Parallèlement, l’on retrouve un léger goût d’alcool réchauffant jusqu’en fin de gorgée et auquel s’y rajoute progressivement une légère amertume de houblon herbeux aux petites notes florales. Post-goût moyen et aux petites notes asséchantes, légert-moyen amer d’alcool, léger de houblon herbeux et avec un léger goût fruité (zeste d’agrumes).

(bottle, 33cl) Hazy, amber colour with a big and loose, slightly tanned foamy head. A bit cheesy yeast-character with hints of cara-malt and nuts in the background. Moderately sweet flavour, medium bodied with a moderate carbonation. Nutty cara-malty taste, accompanied by mildly sugary notes and a very subtle fruit-character; sweet and slightly bitter finish, again with nutty and subtle fruity accents. Nice but not directly my kind of taste. 08.VI.12

750 ml bottle into tulip glass, no bottle dating. Very interesting method of securing the cork with a staple looking piece. Pours slightly hazy golden amber color with a nice 2 finger fairly dense white head with great retention, that reduces to a nice cap that lingers. Some good spotty foamy lacing clings to the glass. Aromas of grape, apple, hay, grass, pepper, honey, earth, pear, lemon zest, bread, and light fruity funkiness. Nice and well balanced aromas with good strength and complexity; very pleasant. Taste of apple, grape, honey, herbal, hay, grass, pear, lemon, pepper, earth, clove, bread, and cracker. Light earthy tartness and herbal spiciness on the finish; with lingering notes of light fruits, hay, grass, earth, pepper, clove, bread, and herbal spiciness on the finish for a good bit. Very nice balance of fruity flavors and earthy spiciness; with nice complexity and no cloying flavors. Medium-high carbonation and medium bodied; with a fairly crisp and lightly prickly mouthfeel that is nice. Alcohol is very well hidden with pretty much no warming noticed on the finish at all. Overall this is an excellent Biere de Garde! Great flavor complexity and balance; and extremely smooth to sip on. Highly enjoyable offering.

330 ml bottle. Pours a red brown with light head though not much carbonation. Aroma of copper, malts, and caramel. Flavors of roasted malt, spice, and dried fruit. Warm.

750ml bottle. Clear golden colour with average, collapsing, macropore to frothy, minimally lacing, white head. Grainy and minimally sourish, strawy aroma with resemblance to a Kristallweizen, hints of medicinal alcohol. Taste has initially tart and bitter notes, later additionally a yeasty touch, hints of oak in the finish. Quite a range of flavours, though not matching my preferences.

Rating from notes, 2012: 750ml bottle picked up at Cora-Forsbach. Pours out a light amber color, thick, creamy head, chunky lacing. Aroma brings forth Belgian yeast, pit fruit, some light pastry sweetness. Taste is more of the sweetness up front, light brandy notes, rich, deep malt character, some of the alcohol making itself apparent. Taste lingers for a bit, with a bit more of the alcohol heat warming the gullet. Really solid. Makes me miss my monthly trips to Cora.
