Wat is gestart als een gezamenlijke hobby van Dimitri Verbraekel en Marc Verberckmoes, 2 collega's-vrienden, werd in 2011 Brouwerij 't Kroontje en groeide uit tot een stilaan vaste waarde in het brouwersmilieu en zeker ook in onze gemeente. Na het plotse overlijden van Marc in 2018, ging Dimitri alleen verder met het ontwikkelen en produceren van de Rebellebieren, geheel volgens de stijl waarin de brouwerij oorspronkelijk werd opgestart.

Wij staan voor het artisanaal produceren van bieren van hoge gisting, volledig met natuurlijke producten. Geen toevoegingen van chemische middelen voor ons, enkel puur natuur! Een goed voorbeeld hiervan is ons frambozenbier: geen toegevoegde suikers of smaakversterkers, maar échte verse frambozen werden gebruikt om dit bier te maken. Ook bij het vervaardigen van onze nevenproducten (kaas, pastei en pralines) door anderen, hebben wij er een zwak voor om dit te laten doen door artisanale familiebedrijven die eerder kwaliteit dan kwantiteit leveren.

At Wieze Bierfestival. Limited ’experiment’ (from this brewery’s perspective at least) with a famed American hop variety... Regulary shaped, moussy, snow white, stable head over a hazy golden beer with warmer peachy hue. Aroma does not reveal much hoppiness at all, let alone Simcoe: some off-putting DMS (fortunately faint), banana, pineapple, grass, gooseberry, dried orange peel, minerals. Crisp, rather fizzy onset, minerally with sweetish banana ester next to pear and gooseberry accents, basic dull sourishness, smooth mouthfeel. Cereally malt sweetish middle with a caramelly edge, some ’sweaty’ graininess, sweetish ending with some warming, gin-like alcohol and a mildly herbal and very faintly citrus peel-like hop bitter touch. Simcoe is one of my favorite hop varieties so this is disappointing to say the least: I really do not understand what the point is of using a beautiful New World hop variety so frugally that it remains all but unnoticeable. Point off for making a false promise!

At Wieze Bierfestival. Tripel (re)fermented with a Brettanomyces strain from Wyeast, limitedly produced. Off-white, very stable, lacing, moussy head, lightly hazy golden blonde colour with greenish hue. Aroma of sweaty and urine-like Brett funkiness indeed, banana, pear, sourdough, unripe peach, white bread, unripe plum, cardboard, dust. Estery onset, gooseberry and raw pineapple, low in sweetness but still with a banana-like core, sour berry tartness stretching out over the whole palate - in fact more sourness than funkiness, so I suspect the Brett was not alone in fermenting this beer. Smooth, cereally pale malt sweetish backbone, bit hayish ending, slight bitterness but most of all, ongoing, softly drying tartness. Comparable with Roman’s Rebelse Strop and the like: the reinvention of Brett applied to simple Belgian ale standards.

Bottle @ home. Slightly unclear yellow to light orange color, virtually no head. Dislike the aroma. A bit citrussy but it mainly just stinka. Taste lightly malts, lightly citruspeel. Don’t get much more than that. Meh. Not very good.

33cl bottle shared with Kermis. No head. Clear deep burgundy pour. Not an imperial stout. More of a quad. Stil a decent brew

Bottle shared. Dark brown with no head. Aroma of big chocolate, cocoa, overripe dark fruit, malt, toffee and caramel. Flavour is heavy sweet. Above medium bodied with soft carbonation. Not an imperial stout but not bad anyway. [13-07-2016]

Bottle shared featuring a fairly nice picture of a self-satisfied looking fox on the label. Very hazy orange blond with a big white head. Aroma of yeast, citrus, herbal notes, a little fruit and malt. Flavour is moderate sweet and bitter. Medium bodied with above moderate carbonation.

Bottle shared at home thanks to the Bierpallieters. Hazy golden with white head. Some citrus with lime bergamot, milky yeast, bitter dried grass, light sweet malts, hazelnuts, dried apricot. Under medium sweet and bitter. Medium bodied. The smell is full of lovely citrus notes but the taste is a bit lacking. Still great for a free beer!
