Dark roast and toast. Jet black brown with a rich light brown head. Roast, toast and some chocolate. Nice fudge notes and a long cocoa finish. Not much barrel, but quite nice.

On tap at Sooke, pours a cloudy bright yellowish blonde with a small white head. Aroma is full of lively, floral gin upfront, with lots of botanicals - saison elements are undetectable to me. Flavour is a little less bright, with lots of floral notes, some botanicals, and gentle saison yeast further back. No bourbon character whatsoever. It's a fun experiment, but not a good beer really.

On tap at Sooke, pours a hazy dark mahogany with a small beige head. Aroma brings out light vanilla, candied red fruits, and toasted caramel. Flavour is quite chocolatey, with lots of cocoa upfront, some fruitiness, little else. Very cocoa-y. Pleasant cocoa bomb.

On tap at Sooke, pours a cloudy orange with a small white head. Aroma is robust, with caramel malt, resinous hops, and a bit of stone fruit. Flavour is a bit too malt-driven for my tastes, but it's decently balanced - with caramel malt and piney hops. Smells better than it tastes - too sweet and caramely, despite the high bitterness on the finish. Alright.

On tap at Sooke, pours a clear golden blonde with a small white head. Aroma brings out lots of esters, with cotton candy and caramel. Flavour is drier, with Belgian yeast, some cotton candy, floral notes and biscuity malt. Rather complex for the style, with a very nice cohesion between the Belgian yeast and resulting sweetness. Good stuff.

Flavour is bright and biting, with a very nice herbal bite upfront, bready malt, and a hint of caramel. Biting, herbal character on the finish. Very good.
