Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Panda 🐼 at home big thanks to Danlo. A almost clear deep orange coloured pour with a dry woody apple, flint, mellow funk, oak, vanilla. Flavour is composed of fizzy green apple, raw oak, mellow funk, mineral. mineral. Palate is nice fizzy effervescent, drying oaky tannin, light tang. Really interesting, well made.

Panda 🐼 at home big thanks to Danlo. A clear golden orange coloured pour with a not much of a head. Aroma is dry woody apple, bark, oak, light boozy, some whiskey. Flavour is composed of dry tart apple, light funk, woody tannin, oak, bark, mellow whiskey, smooth whisky, integrated well. Palate is tart, tannin, to drying finish, mellow carbonation. Nice stuff.

750ml wired cork bottle from Fine Cider Co. Opened with a loud pop and a gush. Hazy orange gold colour, bubbly white foam head that slowly dissipates and aroma of fruity, apple, barnyard funk, citric, woody, earth. Taste is tangy, fruity, apple, with citrus notes, tangerine, wood barrel, sourish, funky, and drying bittersweet earthy tannins. Medium bodied, spritzy carbonation, very dry and tannic finish. Very drinkable.

750ml bottle from Fine Cider Co. Hazy orange gold colour, short-lived white bubbly head and aroma of apple, fleshy, fruity, woody, funk. Taste is tart, tangy, fruity apple, orange citrus, juicy, stone fruit hint, with woody funk, alittle acidity and bittersweet tannins. Medium bodied, low carbonation, dry tart & tannic finish. Very drinkable.

Bottle from the Courtyard Dairy as part of their virtual cheese and cider tasting. Pale gold with a pleasant light to moderate fizz. Full-bodied and sweet to start with. Baked apples with sultanas. A light tannic hint and then creamy vanilla. Just a hint of dryness in the aftertaste. Very tasty, and stays just the right side of getting too sweet - in fact it's far more more-ish than sweet ciders normally are. All three of us enjoyed this one.

Aroma: dust, leather and green apples. Taste: dusty and leathery leading to a fine carbonation. Dry palate. Semi sweet. Next one please!

Panda at home, thanks to Edward Danlo, 09/03/23. Lightly hazed orange with a decent enough off white cap as it goes for a cider. Nose is apple pulp, grains, oak, faint honey, straw, tannins. Taste comprises apple skins, caramel, light balanced sugar, vinous, tannins, light acidic twinge, hint of funk, oak. Medium bodied, fine carbonation, drying close. Solid stuff as expected.

750ml bottle from Cat in the Glass. Clear orangey amber gold colour, some short-lived bubbles on top and aroma of apple, fruity, whiskey cask, oak, vanilla, some funk. Taste is tangy, tart, fruity apple, buttery, whiskey barrel, vanilla, mellow woody funk and drying tannin. Oily mouthfeel, medium bodied, low carbonation, dry tannic finish. Very drinkable.

Bottle shared at Brews of the World. Clear, white wine pour, a few bubbles . Apples on the aroma, of course. Taste adds some barrel notes and yeasty funk to the apples, for real smooth taste. Really nice
