Unfiltered, deep red/brown body with an full, frothy off-white head. Nose includes caramel malt, grain, and some fruity hops. Really nice fresh and tasty elements through the taste profile. Rich toffee, chewy malt, fruity hops, a touch of pepper, berries and booze all mix well. A rich dense body and a smooth finish set the excellent BW off.

Audacious, bodacious and definitely boozy, but still a massive beer in an acceptable balance. Every edition of the Catherine is big piece of work, and relies heavily on casking for its over-the-top impact. This version has enough solid beer elements to warrant a serious look-see. A muddy black beer with a thin tan head, it has a big nose featuring rum, roasted malt, nuts and dark chocolate. The rum casking leads the taste profile but is quickly drawn into context with vanilla, oak, liquorice and chocolate elements. Under-tastes of coconut, leather, dark berries and enough hops balance out the booze and sweetness. A faint underlying sourness adds to the complexity. Should age well too.

A near black body with a roasted malt nose. This is a smooth, easy drinking black ale. The roasted malt has a nice soft edge and blends well with both the earthy and fruity hops. A slight creaminess and a hint of dark ripe berries, coffee and chocolate round it out really nicely. The bitterness of the hops counterbalances the sweeter elements effectively. Stays in balance right to the end. The body is a bit thin, though.

A big rich scotch ale. Nose features malt , brown sugar and a hint of dark fruit. This is a well balanced, big, rich double scotch ale. The taste profile has a number of well balanced elements - dark caramel malt, toffee, vanilla, bourbon booziness and hints of oak, grain, molasses and dark ripe fruit. Under it all, there is enough hops (barely) and soft carbonation to keep this all real. Nice rich body aswell.

Sampled the 2015 Nelson Sauvin version of this collaborative beer. Thick off-white head on a black body. Some grass, fruit and malt on the nose. Taste features a nice blend of fruity, grassy and floral hops, roasted malt, a hint of alcohol warmth, a touch of chocolate and a little rich caramel. Well crafted and integrated. A really tasty, but not cheap, black IPA.

Another well crafted beer from Le Castor. Very drinkable session IPA with an admirably prominent citrus and grapefruit hop taste profile. The malt underneath is very understated, reminiscent of malts from west coast American IPAs. Well done!

The nose offers spiced yeast with a solid hint of cloves. The taste profile begins softly, with Belgian yeast, cloves and other spices, citra hops , a splash of lemon and banana emerging over the next few seconds. The significant effervescence adds to the refreshing impact of this beer. Another well balanced high-quality product from Le Castor.

A malt and rum nose with a hint of cherry. Body is appropriately viscus and rich. Freshly poured, the effervescence balances the sweetness and smoothness of the rum casking. A slight bubble gum finish in addition to the initial characteristics. A lovely winter sipper.

A 660 ml bottle from the \"Omni\" on Begin in Gatineau, Quebec. A very light amber body topped by an ivory white head. A very classy west-coast IPA from just outside of Montreal! Hops are typically grapefruit dominated with a soft malt backbone and some grain. bitterness is non-astringent with only a soft aftertaste. Very refreshing and well crafted.

A heavy dark body with a thin tan head. The nose reveals the dynamic arrangement of the taste of this excellent Imperial stout -- classic coffee and chocolate with a lovely complementary rye infusion. The taste combines these three elements to exceptional effect -- a wonderfully warm and soft chocolate/roasted coffee body extended and complimented by the rye casking. A touch of vanilla adds to the taste. Some casking overpowers the taste of the beer. This rye selection warms and builds on the tastle of this classic Imperial Stout and makes it an unusually successful casking experiement. I’ve bought every bottle of this limited edition that I can lay my hands on. Another great success from Microbrasserie Le Castor, who are fighting their way into the top 4 micros in Quebec.
