Description
The microbrewery is founded by Achilles Van de Moer on the passion for special beers. After 7 years of trials with different beers, the decision to start a microbrewery in Itegem was made in 1999. The brand name of beers is “Serafijn”. All beers are high fermentation brews, with second fermentation in the bottle. Most of the beers are contract brewed, but some of them are also brewed at their own location.

In 2015 Achilles became part of Caupona bvba (of the Prik & Tik stores in Heist-op-den-Berg and Herselt). The brewery is now called ''Brouwerij Serafijn.'' That is the new company in Heist that houses the Serafijn beers. The former microbrewery in Itegem has been dismantled.

The beer is now brewed at the Pirlot brewery in Zandhoven.

21/VII/17 - 33cl bottle from Willems (Grobbendonk), shared @ Belgian Ticks Tasting (home) - BB: n/a (or maybe we had the same problem as kraddel, but didn't even notice there was a date on the cap. Probably the same batch still, though) (2017-1092)

Clear amber to orange beer, big irregular aery light beige head, unstable, non adhesive. Aroma: very malty, grains, cow fodder, hay, bit sweet, some caramel. MF: lively carbon, medium body. Taste: pretty bitter, malty, some caramel, dry, bit grassy, hoppy touch. Aftertaste: caramel, sweet malts, hay, cow fodder.

getrunken im Frühling 2017
Der Wolf 7 ist ein Blond mit feinem, eher mildem Geschmack. Neben den vielen belgischen Bieren, die oft sehr bitter und alkohollastig sind, ist dieses Bier ein Leichtgewicht. Es ist aber aromareich und hat hat einen angenehmen Abgang.

The ’massieve ale’ in this Paters en Prinsen project, at Wieze Bierfestival. Irregularly cobweb-lacing, moussy, stable, beige-ish off-white head over a cloudy mahogany brown beer with burgundy hue. Aroma of raisins, caramel, banana, brown rum, cookie dough, toasted white bread, candi sugar, dried plums, sugared tea, ruby port. Estery onset, banana, fig, peach, residual brown sugar sweetness, fluffy and full body; caramelly, bready and eventually mildly toasted malt backbone, some phenols and lingering banana ester touch, port-like alcohol and herbal hop bitterish accent in the end, yeasty. As cliché as it gets but perfectly fine technically.

Different label, labeled as ’serafijn 6’ at 6.2 ABV. Date stamp is black, on a black cap... Genius !!!! In the right light, I THINK it is BB02/08/18. So I assume this is the new label? Pours darker blonde, head fades fast. smell is bit sweet, mild yeast. Taste is bitter, sharp, very yeasty. Bit metallic in the back, but in a right amount to still be good. Nice. overcarbonated though !

20/11/2026 @home from a trade with jerre. Clear yellow with white head. Malts, bit spices, sweetness. Typical shit

F: huge, light off-white, average retention, collapsing. C: pale coppery with more red, almost clear with yeasty debris floating in. A: malty, banana, orange, toffee, molasses. T: huge banana taste, malt, molasses, caramel, hint of alcohol, floral, spicy, medium to full body, normal carbonation, not bad may be quite cliché but taste is good and enjoyed, 0,33l bottle from Delhaize in Antwerpen.

A hazy dark brown colour with a massive head of foam.

Loads of caramel malt in the smell Well, that and pitted fruit; plums and some raisins.

The pitted fruit takes center stage whilst the caramel is much diminished in the taste. Fruity tartness here with pretty strong alcohol for the abv.

Almost full bodied with medium carbonation.

Good brew.

Date of January 15th 2014 on the label.

Rusher and a gusher so watch out.
Pours a cloudy rusty colour with an avalanche of foam which takes some time to settle down.

A delightful nose of sweetish fruit greets my nose. Yeasty and malty as well. Caramel mixes nicely with the fruit.

Taste follows the smell with an addition of tart hints. Alcohol pretty noticable.

Light bodied sort of light carbonation.

Best before or bottled on, I dig this.

Bottle @ home. Has no exp date on the bottle. Great clear golden colour with a nice head. Smells quite herbal, dusty, barn. Tastes sweet, malty, herbs. Medium body, soft carbo.

Drinking a slightly older bottle @ home. Smells and tastes pretty malty and not very herbal. Has a nice sweetness to it. Simple. Combined with pretty low carbo it’s quite a smooth and enjoyable triple for me.
