We designed and installed our 18 barrel brewery during 2011 and brewed the first full scale gyle in November 2011. The equipment was custom built for us in Burton upon Trent.
The brewery is on the beautiful Notley Farm estate on the Oxfordshire Buckinghamshire borders, with far reaching views over the Chiltern hills. We are as eco-friendly and sustainable as possible; recycling nearly all our waste products and our spent raw materials go to local farmers to feed their cattle and pigs.

Cask gravity at the Pig’s ear 2014. Reddy, dark caramel coloured pour with a dirty Tam head. Aroma is faint polo mint and nutty malt with a little bit of tasted bread. Peppermint. Flavour is composed of peppermint, choc powder, nutty malts, toothpaste. Palate is medium light with low carbonation. Lingering fresh mint and stale coco.

A rather generous sample courtesy of Russ (brewer) at XT Brewery, Thursday 27th November 2014 (cheers Russ!) This pours a dark brown colour, very dark with a very fine sediment just noticeable. Much like the standard version the taste is erring towards chocolatey with cocoa and big ballsy malty backbone. However unlike the standard version the saison yeast here gives this a twist, interestingly the twist isn’t as pronounced as one might expect. I understand from Russ that the abv is now probably at 6.5% and the effects of using this yeast have certainly changed this beer, yes it has a slightly different fruity twang and yet it appears softer, any lingering bitterness has been somewhat blunted, hoppiness still there but quieter, its still rich, and malty beer but I also detect a nuttier edge that I enjoyed. It really is another very interesting twist on what is a very solid beer. A7 A3 T8 P4 Ov15 3.7

Cask-conditioned at the Bag O’Nails, Bristol September 2014. Dark brown, with a slight, off-white head. Roasted mlats, with a coffee bean edge, some plain chocolate and a dryish finish. Good.

Cask-conditioned at the Bank, Bristol 11/11/2014. Reddish copper in colour with a slight, off-white, head. A malty best bitter, with berry fruits, a touch of brown sugar and moderately bitter finish. Good.

Cask gravity at the Watford beer festival 2014. Clear yellow straw coloured pour with a fleeting white head. Aroma is pale males and a little zip of lemon citrus. Flavour is straw malts with a a bit of sweet honey malt, earthy lemon hop is quite subdued. Palate is semi sweet, grainy on tongue and moderate carbonation. Lingering orange rind.

Cask at Blackfriars, Glasgow. Pours amber with creamy head. Fruity and hoppy with dry finish. Medium bodied. Nice one.

500ml bottle from Favourite Beer, Cheltenham. Golden colour with a white head. Aroma is fruity, floral, and caramel. Flavour is fruity, floral, and caramel with a bitter finish.

Cask half-pint in Far From The Madding Crowd, on 18th Oct 2014, just before going to the CAMRA Oxford beer festival. Golden body, bright and clear, the head white and lasting. Nose is malt sweet with a citrus bent, as is the taste. Drying finish to this fairly light flavoured sweet brew, nice.

V142 c4 Cask at the Thame Food Festival- this was the green hop version. Bright, clear gold with a thin white head. Light lemon and a little kiwi up front with some grassy notes following. Smooth, mellow mouthfeel, like many XT beers. Light in body and flavour and none the worse for it. A relaxing, chilled out blonde that you’d happily enjoy all summer. Nice, and grew on me the more I had.
