Description
Good ideas often start over beer. Always looking to take a good thing too far, we sat down over a beer (or two) and decided that beer itself was a good idea. Of course, not just some easy-drinking, institutional prole beer, but stuff like the beers we’d had at great bars. In short, we wanted beer with flavor. Complexity. Character. Intensity. Not words found in the mass-market lexicon.

So with a banjo burner, a bunch of industrial-sized kitchen pots and as many buckets as we could find, we jumped in feet first. Once a week, every week. Now, several years later and with a 15 barrel version of said banjo burner and kitchen pots for a brewhouse, we’re befuddling the beer judges and converting the masses. One pint at a time.

Our original brewing system has a long and sordid history befitting our line of beers. It centers on the second-to-last kettle ever built by noted coppersmith Fred Zaft, a handcrafted, solid copper 7-barrel brew kettle originally housed in a nineteenth century bar in San Francisco’s old Italian neighborhood. At one point, the bar had been totally restored to its past glory, replete with a “self-flushing spittoon” under the bar (yes, it was actually a urinal). Unfortunately, we were not able to get the self-flushing spittoon.

If you think our beers tend to cross various lineages, you’ll love tidbits like the fact that in 1951, our current building endured a freight train derailing and plowing into the building. We hope our beer can make that sort of impact on you.

Stolen from the fridge of a friend after leaving a house party in Grand Rapids, MI; enjoyed at home on a Friday night before celebrating my wife’s birthday. This stuff is great, glad I stole one of these! Appearance is amber with a thin white head that laces to the glass. Aroma is mostly grassy hops, has a great profile. Taste is equal parts grassy and bitter, flavorful, tastes like a really good IPA.

Bottle. Pours a deep blackish brown with a frothy tan head. Aromas are a mix of powdered chocolate and pine needles and flavor is similar with most of the kick coming from resinous piney hops in the finish. It’s very nicely balanced for a BIPA and an excellent example of the style...

Bottle: Pours hazy amber with a small, whipped beige head. Allspice/nutmeg/clove aroma. Holiday spice....cardamom, nutmeg, grains, lightly baked dough taste. Powdery spicing...almost overdone, but not bad as a holiday beer.

Bottle. Cardamom and clove dominates the aroma - hints of ginger and malt. Golden yellow with moderate head. Sweet cardamom, clove, lemon, biscuit malt, and straw flavor - fortunately the spice is much more subdued in the flavor. Decent body.

Bottle. Earthy grass and orange malt aroma. Golden yellow with large off-white head. Sweet orange malt and earthy grapefruit peel flavor. Decent body. Okay - apparently my bottle wasn’t too fresh.

12 oz. bottle thanks to Eric S. Much thanks. Dark ruby color with some thin white head. Aroma of hints of maple syrup and traces of dried fall leaves. Sugar.

The flavor is very sugary with to much caramel. The earthy malts give an astringent aftertaste. Yeah, no. Maybe the bottle is to old.

12 ounce bottle into pint glass, bottled on 10/15/2015. Pours moderately hazy/cloudy deep orange/copper color with a 2 finger dense and rocky off white head with great retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of grapefruit, pineapple, lemon zest, orange peel, pepper, pine, caramel, brown sugar, wheat, toasted biscuit, light nuttiness, herbal, and floral/grassy earthiness. Very nice aromas with good balance and complexity of citrus/earthy hops and dark/bready malt notes; with good strength. Taste of big grapefruit, pineapple, lemon zest, orange peel, pepper, pine, caramel, brown sugar, wheat, toasted biscuit, light nuttiness, herbal, and floral/grassy earthiness. Moderate amount of piney/spicy bitterness on the finish; with lingering notes of grapefruit, pineapple, lemon/orange peel, pepper, pine, caramel, brown sugar, wheat, toasted biscuit, and herbal/floral/grassy earthiness on the finish for a good bit. Very nice complexity, robustness, and balance of citrus/earthy hops and dark/bready malt flavors; with a great malt/bitterness balance and zero cloying flavors after the finish. Moderate amount of dryness from bitterness as well. Medium carbonation and body; with a very smooth and moderately creamy/bready/sticky balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a very nice hoppy dark wheat ale style. All around good complexity, robustness, and balance of citrus/earthy hops and dark/bready malt flavors; and very smooth and easy to drink. A very enjoyable offering.

Bottle. Pours opaque black, medium creamy dark brown head, dissipates slowly with nice lacing. Aroma is rich roasty cocoa, whiskey, sharp oak tannins, anise. Flavor is light plus sweet, light bitter, roasty, cocoa, rye whiskey. Hot. Full body, creamy mouthfeel.

bottle - Pours hazy pink with a small off-white head. It has a light, pleasant raspberry aroma. The flavor is sweet and fruity with a bready taste, maybe some wheat. It’s medium bodied and fairly good.

Bottle at Derek’s. Raspberry aroma. flavor is dry, some more berry and light light malt flavor. Raspberry is decent but not a lot going on here.
