Tap at the barrel cellar - putting a beer this light in whiskey barrels always carries a danger of the barrel taking over the beer - they tried to keep that from happening, but I still mostly just taste oak - some tartness and lactic sourness, but still, mostly strong oak throughout - meh.

Bottle thanks to a trade! Pours a hazy amber gold with a near white head that dissipates nearly completely. Aroma is quite dry with a good amount of funk and a bit of acid and earthy fruits. Flavor is dry as well with a good amount of funk and some earthy sour fruits with a hint of acid.

Tap at the barrel cellar - turbid orange - fluffy white head - nose is musty, dusty, lightly funky, with soft herbal and citrus notes - soft carbonation on the palate - flavor is dry, semi-tart and moderately bitter - some tropical and citrus notes - light musk and funkiness - finish is dry, with a moderate flinty mineral bite - okay, Chad, sell this in four packs for a reasonable price and I’ll buy it all the time.

Tap at the Barrel Cellar - nose has quite a bit of sulpher in it, along with some light, grainy malts and a bit of white wine and oak - kind of smells like a skunked pilsner blended with wine - low carbonation, fairly smooth mouthfeel - flavor is very dry and fairly acidic - strong malic acid and some bile flavors wash out pretty much everything else aside from very strong oak - some more pleasant notes of wine and tropical fruits never get a chance - finish is overpowering oak - tastes like someone is cramming a stave down my throat - very rough and quite unpleasant - I love saisons - I have probably tried close to 200 in my beer tasting life - this is one of the worst.

2012 bottle from barrel #59. Pours with a cola deep brown near black hued pour and a foamy offwhite head that fades. Mild lace, mild legs. Roma’s of stewed fruits, prunes, figs, bright cherries, barrel, funk and earthy leather. Mild metallic, wet wood, vinous, dark fruit. Toasty malt, mild roast. Not as well of an integrated aroma as the brandy version. Flavors are earthy, bready, vinous, cherries, brown sugar, alcohol, barrel, congac, damp leaves and funk. Complex flavors, mildly sweet, light coffee, medium acidity, cola. Big cherries, feels a bit sweet. Lightly roasty. Warming in the esophagus, fuller carbonation, rounded, medium body with lowish tannins. Closer to what I anticipated, but I was really impressed by the regular brandy version.

2012 bottle from barrel #61. Pours with a deep brown, near black hue with a firm brown head with good retention. Aromas are of stewed cherries, plum, dates, very vinous, brandy, dark chocolate, leather, vanilla wafers, light spice, medium funk, wood, earthy, light acidity. If I didn’t know better I’d assume there were cherries in the beer. Roast, marshmallow, burnt toast. Flavors are acidic, with brandy, tart cherries and leather. Roasty, graham cracker, vinous, dark chocolate, char. Elegant. Some warmth and barrel. Very lively carbonation, dried dark fruit, medium body, warming. Very good!

Green Wax 2012 bottle. Pours with a hazed orange gold and a large white head that slowly fades. Aromas are of a slightly young Brett character, tons of tropical fruit (pineapple, guava), grassy hops, fanta soda and sun tan lotion. Grainy malt character, slightly catty, complex funk with strawberry and barnyard. A touch messy, but not bad. Flavors are quite sour, with tropical fruit, but a strong young Brett Cheerio character with a bit of diacetyl (so despite the dry hops, I’m going to sit on my other bottle for a while). Great acidity, nice pineapple esters, very juicy, nice grassy dry hop. Tangerine and peaches. Medium high carbonation, tannic finish, mouth puckering. Good, but needs a bit of time to clean up to become great (worth waiting 4-6months).

Bottle shared with sebletitje and Tilquin’s Peirre, cheers guys! It pours sort of murky amber with no real head to speak of. The aroma offers up vinegar notes that move toward a light soured citrus and a faint echo of sweetness and prunes well off in the background. The taste delivers tartness that is restrained by a smooth sweetened vinegar note and then picking up a mild spicy wood sensation. So this is a Quad that is light, yes . . .light, crisp and refreshing somehow. It doesn’t even seem possible but that’s what I’m getting. It even seems like maybe an 8% ABV beer as its bottle stated ABV really isn’t apparent. Cool experience.

Bottle thanks to Dallas. Pours a cloudy orange color with a medium white eggshell head. A huge and awesome brett nose with tropical fruit. The flavor is dominated by apricots and massive dry and dusty brett, some wood, very dry. Complex. Very damn good. I really dig Crooked Stave.

37.5cl bottle courtesy of and split with Ibrew2or3, thanks Dave. Couleur est acajou foncé trouble laissant apparaitre qcq bulles disparaissant aussi vite. Arôme présente un bouquet fruité rouge suivi de brett relevé par une épice de barrique et d’aigreur. Le bourbon se distingue très bien sans pour cela dominer. Ce dernier donne le côté boisé, barrique suivi des caractéristiques type du bourbon. Cependant, le côte quad est bien restitué et offre un bouquet rendant des notes de malté, fruits rouges avec une pointe de sucré. Palais est ici aussi très complexe, oscillant entre brett donnant une aigreur certaine mais adoucie par le profil bourbon qui ajoute un côté léger accompagné d’une pointe boisée vanille. Tout comme pour l’arôme, le côte quad est présent mais le palais reste unique, oscillant entre barrique, bourbon et brett reprenant le profil de base d’une quad. Au final on s’attend à une quadruple typique belge et on se retrouve avec une bière complexe couverte de manière positive par les bretts.

Bottle. Thanks BrewThusiast! Pours hazy amber with a very small white head and some lacing on the glass. Aroma is tart - brett, funk, lemon, somewhat fruity - cantaloupe? Flavor is about the same, lightly sweet and medium tart. Medium body. Pretty good effort; not quite up to Sanctification IMO.
