Description
The brewery started with the first brews in 1995 and brought the first beers to the market in 1999. The brewers work according to traditional brewing methods to produce distinctive beers from the noble raw materials of barley malt, hops, water and yeast. The quality of the products is guaranteed by modern equipment in constant evolution and systematic analyzes of every brew in the laboratories of the Abbey Notre Dame d'Orval.

Bottle 37,5 cl. Courtesy of yespr. Pours a hazy amber with an off-white head. Sweet aroma of caramel and overripe fruit with no pronounced hop character. Solid body, licorice notes and overripe fruit. Ends with a warming and distinct alcohol character. Hop character is fairly disappointing though. 260911

Bottled. A hazy amber beer with a thin off-white head. The aroma has notes of malt, straw, and caramel. The flavor is sweet with notes of malt, spices, alcohol, and caramel, leading to a dry finish. Thanks yespr for sharing.

37.5 cL bottle. Pours clear and golden orange with a small tan head. Aroma is roasted dark malty, light spiced. Mild acidic, spiced, toasted malty. Light fruity. Thick and hoppy dense finish.

Bottle. Pours muddy brown. Off white head. Nose of coriander, burnt orange peel, toffee, caramel and spicy hops. Taste is mostly harsh barley and grain with lots of malt, some toffee and caramel. Some alcohol in finish. Medium body.

37.5 cl bottle thanks to and shared with sebletitje on September 15, 2011BB 02/2016Hazy copper color, yellow head. Sweet, malty, spicy, loads of alcohol scent. Sweet, bitter, alcohol taste. Huge alcohol aftertaste, also spicy. Smooth mouthfeel, medium bitterness. Finishes dry. Warming alcohol.

Bouteille 37.5cl Orangée, blanche crémeuse. Arôme levure fermentée, alcool bien présent voire plus que anticipé, aspect beurre, sucre résiduel avec touche de fruits noirs, malt est modéré tout comme le houblon qui ajoute une pointe fleurie. Très bon essaie pour St Hélèné, mais bière qui parait encore bien jeune et pourrait encore bénéficier de qcq moins en bouteille. Reste fruitée et douce, houblon est un peu trop en avant laissant une amertume qui enlève un peu au profile attendu du barley wine. Sur la fin, note caramel sucré collant aux lèvres, alcool est bien là et réchauffant.

Bottle @ home shared with DutchDrebus. Hazy yellow color, white head. Smell sweet but not too much and fruits. Taste malts, little sweet, fruits and nicely bitter. Medium body and carbo.

Good, reasonably stable, thick-set, dirty cream-coloured head over virtually black beer, if with a reddish sheen. Heavy, aromatic nose with old wood, dark chocolate and an alcoholpunch with deliberate spirit (Bourbon, whisky)character. Superbly "praliné", but with full chocolate. Ashy, dry, roasted malt/stoutflavour with just a hint of alcoholsweetness retronasal. Bit of sweat, paprika, and of course, chocolate, ultra-dry but for the alcohol. Warming up, I seem to get some coriander. Surprisingly thin for its stamina and ABV. Probably very attenuated. This is a dry stout, on the verge of an I.S., and to my tastebuds, barel-aged.

Draft @ 9th Rencontre des Brasseries du Luxembourg Belge. Very limited release. About 200 bottles made according to Raphael (brewer) and a few kegs. Sainte-Helene experimental brews as was their ltd barleywine release. Couleur dorée opaque, mousse soyeuse blanche. Superbe découverte aussi, avec 3.5% une pils facile à boire, légère et complexe. Mais une qui allie aussi un style typique avec un houblon noble américain, et qui me réconcilie avec le style et offre ici un produit de qualité dont les gros revendeurs devraient prendre un peu de la graine. Donc une pils de base avec des notes de malt pils/pale mais avec en retrait une touche de malt grillé allant sur une note de café amer. Le houblon Simcoe ajoute à cette pils une belle dimension citronnée ainsi q’une amertume qui se marie bien avec le style, qui est souvent vu dans les IPA américaines. Néanmoins, ce dernier est parfait pour ce que Sainte-Hélène a voulu faire. Je vois ici une bière hybride qui marie les styles en offrant, certes une pils de très bonne facture, mais aussi une touche IPA de par son houblon. A 3.5% ça se boit facilement, et c’est d’ailleurs ce que j’avais fait durant ce festival.

14/07/2011 75cl bottle @ Klaas' place - BB: 17/11/12 (2011-326)

Pretty cloudy ruby red beer, little brown specks floating around. Yellow to orange head, creamy, stable and adhesive. Aroma: fruity, red berries, little bitter, some caramel coming to mind as well. MF: soft carbon, medium to full body. Taste: fruity and a bit sour, malts, some hops. Aftertaste: bit of sour again, fruity hops. Doesn't remind me of a typical Christmas beer, but maybe that's a good thing!
