Description
A pasteurizer, a centrifuge or a clear beer filter is not dealt with at the Dilewyns brewery. All natural and healthy elements remain in the bottle due to non-filtering. Thanks to non-pasteurization, Vicaris is a living product with taste evolution, discover for yourself when your Vicaris is at its best!
Everything you pour into your glass is brewed with care, hygiene, passion and expertise. From raw material to a refreshing specialty beer ... pure, family and authentic.

Bottle Blond, clear body. Rocky, slightly off-white head. Quite good wedding between lambic and triple in the aroma: wood, hops, flowers, horseblanket, ... Some soury lambic bitterness combined with sweet triple bitterness. Quite dry mouthfeel. Quite ok actually, better then I had this the first time. The balance is not perfect, but the lambic is quite well combined with the triple.

Bottled "tripel - gueuze" (BB 02/2010)
This is interesting one: triple mixed with Girardin lambik. Honey golden color, big cloudy head, some lace. Sour lambic nose: barnyard, black currant and hay. Very carbonated - foamy - mouthfeel. Typical fruity sour lambic flavor diluted with tripel-like yeastyness. Grapefruit is dominating with earthy notes. Sweetish lemony aftertaste. Interesting and good one.

Bottle: Poured a dark black/brown with a light brown head, The aroma was roasted malt possible hints of chocolate and coffee. The flavor followed the aroma with a roasted malt.

Bottle: Poured a hazy orange golden amber with white head. The aroma was bitter citrus and wheaty. The taste is similar sour citrus and very tangy.

Pale golden beer with a slight greenish veil; small but persistent white head. Bit of Brett, lots of citrus, and a bit of malt - and even a bit of alcohol. Which means quite balanced. Remarkable - the lambic is not overwhelming - its balance is perfect. Sweet, tripel-like and a dry, not-quite-sourish finish. Bit peppery too. Medium bodied; bit of slickness, even sticky ending. In itself it’s not a top beer - but its balance boggles the mind. I’m not a big fan of brewery hirers, but Dilewyns is one of those exceptions, that give credibility to the breed.

Bottle Deep amber, clear body. Lightly brown, frothy head. Head lasts long. Nose of malts: caramel, chocolate with some spices. Moderately bitter, lightly sweet initial. Heavily bitter, lightly sweet finish. Rather interesting beer.

Bottle, thanks maeib, at Reading BF 06. Golden with lasting white head. Yeasty, citrus aroma, typical of a lot of similar Belgian golden beers. Blandish sickly tripel.

Bottle , best before Nov, 7th 2008 Pale, yallow body. Large, frothy white head. Aroma of hops and vanilla. Moderately bitter, lightly sour initial flavour. Lightly bitter, lightly sour finish. Very unbalanced.

Bottle. Dark amber with a tan head. Sweet roasted aroma with some spicy hints. Sweet malty flavor with some roasty and caramel hints. Sweet warming finish.

Hazy gold with orange hue; good white head, leaving textbook lace. Coriander nose, dull-sweet-sourish, perfumed. Coriander taste, celeri, soft sweet and sourish tang. Very dull, retronasal dry-spicey. Very well attenuated, however, but still a bit fizzy MF, light to medium bodied in occurence. Disappointing, and that’s putting it mildly. A Generaal, please. Without coriander.
