Pours a clean caramel-amber with a light warm-beige fizzy head that dissipates quickly and hardly any lacing. Just some tiny foam on top, from the tiny bubble carbonation. At first, balsamic vinegar nose that is blended with hints of peach. Then, the vanilla comes out to complete the balance, which lightens the vinegar aromas from normal wild yeast. The mouthfeel is sour, very slight tarty with a mild dry finish. Feels a little thin in the lingering part. A sour start to the flavours with with balsamic touch and then calms down slowly with some notes of wood, vanilla and peaches. Very nice and wishing Halcyon long life.

Oh wow! This is quite unique. Pours a lightly hazy golden-orange colour with a frothy warm cap that lasts a while and leaves creamy lace. The nose has burnt wood, so smokey. The malt base is fruity. The taste turns down a little the smokiness, to blend it with the berry notes and hints of salt in the finish. A very interesting berry Gose mixed with a Rauchbier. Maybe not one to drink another right after, but unique and a must try.

The first time I tried this one was at the brewery, the day before it officially came out... on my first visit there. Now, from the bottle, pours a hazy peach-amber colour with a strawberry hue. The head is white, frothy, almost creamy with good retention and very thick creamy lacing. Sweet nose with cereal grains, strawberry and peach notes. The flavours are the same but some herbal hints of hops come in to balance things. The mouthfeel is mostly wet, but the hops do create a slight dryness in the finish. A nice blend between a fruity beer and a mildly hoppy amber ale.

Found this bottle in one of my older 4-packs that was in my cellar. Pours a hazy amber colour with some golden-orange highlights. The beige head is creamy, frothy, long lasting with some good lacing. The aromas are fruity with the cranberries over sweet malts. The fruits show up even more in the flavours, which is great. Mild sweetness, mild sourness and mild tartiness. Many Beau's fruity beers lack the fruit punchiness. This one has it nicely balanced. Very nice.

(600ml bottle from the LCBO kindly shared) Pours a lightly hazy pale gold with an average white head. Notes of perfumed/soapy florals, wet grass, hay, cereals, lots of herbs, vaguely fruity, a bit of a wort vibe, somewhat powdery and astringent in the floral finish, lightly bitter, drying. Light body, fairly light carbonation. I get the idea behind doing gruits but and they're interesting to try, but I'm not sure I can really say this was enjoyable beyond a sample.

(On tap @ Bar Hop, Toronto, Oct 1/18) Pours hazy gold with an average white head. Notes of ample and decently tart lactic lemon juice alongside citrus zest, some subtly sweet malt, mixed tropical/pit fruit notes, floral and lightly resinous hops, drying fairly tart back end with some low to moderate hop bitterness, pretty lemony all the way through. Lightish body and average carbonation. Easy-drinking but not without some layers, tasty stuff.

A hazed golden ale with a thin white head. In aroma, sweet fruity malt with loads of banana esters, cloves, light mineral notes, nice and smooth. On tap, nice banana bread, light fruity esters, light cloves, chalky character, pleasant. On tap at October West 2018.

A hazed golden saison with a thin white head. In aroma, sweet fruity malt with light resinous floral hops, light Brett, light lactic notes, very nice. In mouth, a nice sweet fruity malt with light resinous floral hops, light Brett, light coriander, very nice. On tap at October West 2018.

Olfactif aux riches malts torréfiés aux accents de café, de chocolat au lait et d’un soupçon de noix de coco. Traces de grains, de pain et de caramel. Liquide brun foncé aux accents rougeâtres, transparent, avec une mousse moka qui se tient moyennement. L’entrée de bouche est riche avec du chocolat au lait, de la réglisse noire, de la noix de coco, de la mélasse, le tout sur une base assez sucrée. Les sucres résiduels confère à la texture une corpulence bien établie. C’est sucré, complexe et possédant tous les éléments d’un porter impérial sans son taux d’alcool. J’aime beaucoup.
