Description
Craft beer in its purest form is what Sebastian Sauer, the head behind Freigeist beer culture, produces. Sebastian is known among experts as one of the first craft beer brewers in Germany. True or not, he's a veteran in the craft beer scene and an expert who is second to none. It's not for nothing that his beers are more popular than any other German beer in the USA, the home of craft beer.

Free spirit beer culture is conquering the craft beer world with the salvation of old, long-forgotten beer styles. Sebastian reads himself into the matter until he has found out all the ingredients of the original recipe and the subtleties and secrets of the old brewing style. With this knowledge, he then ponders how the beer would be brewed these days and what ingredients would be used. He doesn't want to bring old camels out of grandma's handbag to the light of day, but rather to transport the beers of the past with skill and expertise into the present. His beers are therefore not just reproductions of old recipes, but rather modern new editions. With this concept, the brewery has made a good name for itself in the craft beer scene and attracted international attention.

375cl bottle shared with friends. Very little white head. Hazy amber pour. Very interesting beer! :-) Tastes nothing like an altbeer

Bottle from Galeria Kaufhof, Köln
Black color; it pours oily, with almost no carbonation, eventually just a thin collar. The aroma is mild, stale bread, some chocolate and cookies. Strong body, with a round mouthfeel; the chocolate flavor is very good, with just a correction of roasted malts, and an important share of sugars; correct bitterness; balanced.
This beer is missing better aromatic components, but it’s quite solid in the maltiness.

Dark brown color, cloudy, with a generous creamy head. The aroma is mild, but the rosemary wins over the rest; bogmyrtle too. Sweetish mouthfeel, some malt and caramel flavor, some residual sweetness, with moderate rosemary; correct bitterness. Light liquorice too, in the end.
It’s not badly brewed, but I’ll never be a big fan of (traditional) herbs beers.

2014-05-06, bottle from Firefly, Vancouver, 7-4-6-3-14=34
Brown color, this time it’s cleaner, just hazy, with small head. The aroma of dark malts is nice, just a bit chocolatey, and also perfumy. The body is strong; but the flavor plays too much with darker malts, darker shades of caramel, leading to some lightly burned feeling, also very light traces of vegetables.
Less impressive this time.

2012-06-05, bottle from Braustelle, Köln, 7-4-8-4-16=39
Muddy brown color; generous, compact head. There is a strong aroma of resiny hops, and yeast, caramel. The body is strong, the mouthfeel quite smooth; aggressive but pleasing flavor of dark caramel, dark chocolate, roasted malts; it has a very strong bitterness, with some resiny edge, leading to a long final.
A rough beer, atypical, but very enjoyable.

Black color; medium-sized beige creamy head. Nice aroma of continental hops (Saaz-like, green cones, hop oils). Good body strength; strong chocolate flavor, dynamic, with some roasted malts and a mild sourness; correct bitterness, leading to a balanced final.
Interesting and very enjoyable.

Black color, low carbonation, small head. Nice aroma of coffee, vegetables, light sourness. The body is correctly structured, but there is a rather evident acidity, covering the chocolate flavor, and introducing the undesired flavor of vegetables and blood.
The supposed Bretts come through as infection more than controlled inoculation.

Bottle shared at the 1st Israeli Sour Tasting. Thanks Koelschtrinker for this bottle. Clear golden with a white head. A slightly lactic aroma with fruits, light smokiness, wheat and some citrus. Sour lactic flavor with nice citric notes. Medium-bodied. Tasty. Later note: After the tasting I had the last few sips left in the bottle, and a big smokiness hit me on the tongue. So, the flavor is also quite smoky even though I didn’t notice it before.
