Craft beer in its purest form is what Sebastian Sauer, the head behind Freigeist beer culture, produces. Sebastian is known among experts as one of the first craft beer brewers in Germany. True or not, he's a veteran in the craft beer scene and an expert who is second to none. It's not for nothing that his beers are more popular than any other German beer in the USA, the home of craft beer.
Free spirit beer culture is conquering the craft beer world with the salvation of old, long-forgotten beer styles. Sebastian reads himself into the matter until he has found out all the ingredients of the original recipe and the subtleties and secrets of the old brewing style. With this knowledge, he then ponders how the beer would be brewed these days and what ingredients would be used. He doesn't want to bring old camels out of grandma's handbag to the light of day, but rather to transport the beers of the past with skill and expertise into the present. His beers are therefore not just reproductions of old recipes, but rather modern new editions. With this concept, the brewery has made a good name for itself in the craft beer scene and attracted international attention.

Bottle from Bierland in Hamburg. Dark amber with a small head. The aroma was really special with rosmarin, perfume, wood, malt and something sweet like honey. The taste was on the sweet side with spices, particularly oregano. A strange beer but I must say that I liked it.

Bottle from Bierland in Hamburg. Black with a small, creamy tan head. This is my first Imperial Stout from Germany, and a good one. The aroma and taste had smoke, licorice, roasted malt and chocolate. Some vanilla when the liquid got warmer. The finish was sweet. Nice body and mouth feel, I would not hesitate to drink this beer again in the future.

37,5cl bottle. Poured hazy amber with a steady white head. Aroma has sweet malt, caramel and hops. Flavor is sweet caramel, piney hops and hint of alcohol. Long warming sweet finish. Barley wine like, highly drinkable, but too sweet.

Bottle 37.5cl from Alvinne beershop. Brune foncée, col épais moka avec sur le verre un filament doré. Arôme malt et chocolat, grillé sorte de poudre de cacao, levure et un profond bouquet de grains; seigle. En bouche, une bière très épaisse et onctueuse laissant une note de crème. On dénote de suite le seigle et une pointe d’épice de ce dernier. Visqueux avec du chocolat, petite pointe houblonnée et amer citronné, petite touche aigre fruitée noire. Ce côté aigre/funk lactique rappelant la Woodhouse Saphir dans la base levure est soit prévu dans la recette ou une erreur. Je reste mitigé sur l’usage de ce dernier.

37.5cl bottle from Alvinne beershop. Brune foncée, col épais moka laissant un filament doré sur le verre. Arôme de malt grillé, grains, chocolat et caramel avec en retrait un touche de brett. En bouche, malt sympa grillé avec et cela étonne, ce profile de brett qui donne à ce porter une profile vinaigre qui est mélangé avec des notes de malt. Fin aspect minéral et qcq picotements sur la langue venant du brett. Le tout rappelle une petite flemish red avec un beau fini malt grillé et fruité avec une touche de cerise noire et caramel.

(at Festival der Bierkulturen 2010, Köln) Cloudy, golden colour with a short and slightly off-white foamy head. Rather discreet aroma: slightly yeasty and delicately sour nose with wheaty notes and a touch of smoke. Sour and slightly salty flavour, light to medium bodied with a lively carbonation. Sourish wheaty and citrus-fruity taste with slightly lactic accents and hints of smoke; dry and sour-fruity (citrus, apples), also slightly salty finish. A remarkable liaison of intention and the brewers house character. Congrats Herr Sauer ! 16.V.10

Bottle @ Odense Tasting, September 2011. Pours dark ruby brown with a small creamy head. Vague roast and hops. Tart, roasted and hoppy. Oily and slick. A bit odd like some of the others. Not sure if it works but drinkable. Warmth . .

Bottle @ Odense Tasting, September 2011. Pours black with a small creamy head on top. Nose is coffee roast and brett. Slick and oily. Very salty. Flavor is tart. Fruity and heavy bretty. Tart and unharmonic. Hot alcohol.

Black with a small off-white head. Aroma of licorice, malt, and spice. Tart malty and citrus fruity flavour with a salty note and a roasted finish. Really unique flavour has some gose-like salt, lemon tartness and porter character on top of that.
