Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Poured from a 750 ml bottle.
Aroma is very blueberry forward with hints of lemon and stone fruit. Medium light tannic notes from the blueberry skins and some light peppery phenolics. Faint grain notes and light alcohol notes.
Pours a deep, dark, purple color with a small, thin, purplish pink head that recedes quickly and disappears. No lacing and small legs.
Flavor is slightly sweet with a faint acidity and light grain notes. Medium bitterness and light alcohol notes. Fairly strong blueberry notes, but not a juicy, jammy one. These are blueberries that have fermented out kind of like you get with Cantillon Blabaer. Tannins, notes of blueberry skin and some peppery phenolics.
Mouthfeel is medium bodied with medium carbonation. Low, but present astringency from the blueberries and low alcohol warmth.
Overall, a decent blueberry saison, but not one I would chase. The sugars from the blueberries really fermented out leaving the musty, tannic notes. Light peppery, herbal phenolic notes as well. No hints of plastic or bandaids though. I just wish this had more bright fruit notes.

From bottle. Tart raspberry with puckering sourness, raspberry jam, funk, red fruits. Tart and moderate sour, jammy, wonderful.

From bottle. Rich and complex aroma with chocolate, alcohol, caramel, medium sweet. Full body, damn smooth. Remarkable beer.

Bottle. Beautiful farmhouse aroma with citrus, pale malt, grass, stone fruits, light apricot. Tart and mild sour with a nicely dry finish. Medium body. Very tasty Farmhouse Ale, complex, dry, fruity.

Bottle, batch 2. Lots of red berries in the aroma, with a touch of funk. Tart and moderate to medium sour. Gorgeous berry aroma, nice sourness. Medium body. Very good, ecstatic berries. Lovely.

Aroma is fruit forward with moderately strong orange and guava notes. Hints of oak and SARA funk (lemon, green grapes, stone fruit). Light grain and alcohol notes.
Pours a slightly hazy, dull, golden straw color with a medium sized, thick, pillowy, white head that recedes steadily to the edges. No lacing and small legs.
Flavor is somewhat acidic with a light sweetness and light grain notes. Medium high bitterness and light alcohol notes. Moderate orange and grapefruit notes with lighter guava. Light oak notes with hints of SARA funk. Light herbal, peppery phenolic note.
Mouthfeel is medium bodied with medium high carbonation. Low astringency and low alcohol warmth.
Overall, an alright saison. It's overly acidic for me with the blood orange hiding a lot of the guava notes. It's also fairly bitter or 'pithy" from the orange. Would be a better beer if less bitter and acidic. The bright tropical notes are buried.

Flavor is somewhat sweet with medium light grain notes and lighter spelt and oak. Medium bitterness and medium light alcohol notes. Fairly citrus forward with quite a bit of lime and lime zest. Lighter herbal, gin barrel notes. Hints of stone fruit.
Mouthfeel is medium full bodied and creamy with medium carbonation. Low astringency and low alcohol warmth.
Overall, a solid gin barrel saison. Tons of gin character in the aroma while the flavor is a bit more citrus and fruit forward. The spelt and oats add a nice creamy mouthfeel. Balanced bitterness and malt sweetness.

Caramel, dark fruits, American oak, heavy, creamy, a bit of "meaty" notes. Taste is along the same lines, a bit tart, lots of American oak. Pretty good.
