Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!
By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.
Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

Poured from 750mL bottle. Hazed pale yellow with no head. Nice apple skin, mild vinous white wine notes. Enjoyable.

A hazed blonde cider with aroma of sweet apple, light Epsom salts, light acidity, pleasant. In mouth, a nice sweet fruity apple mix with light acidity, light cork, Epsom salts, very nice. On tap at Dominion City.

Can from the source. Slightly hazy yellow color, fizzy. Nice aroma of overripe plums and apple skins with light funk. Taste is earthy plum, more apple, moderate funk, earthy dry finish. Tasty

Can from the source. Clearish golden yellow color, rare bubble. Nice aroma of pear skins, subtle apple, subtle lemon. Taste is earthy pear, slight edge of citrus, dry lightly tart finish. Very tasty

(750ml 2020 bottle from the cidery webshop) Pours clear deep blush to pink with a thin white head that disappears without lace. Aroma of sweet and lightly tart perfumed cherry, Montmorency vibe with tones of cinnamon and marzipan, crushed flowers, clear sweet pear flesh too, strawberries, softly barnyard-inflected mulchy funk, slight seam of acetic acid. Flavour is semi-sweet up front, pears showing first before floral and lightly sweet cherry flesh builds in the middle of the sip along with some strawberry, smooth cinnamon tones quite prominent and playing nicely with the pear towards the finish, soft marzipan bitterness, light to moderate lactic/acetic zippiness into the finish as well. Pear and Montmorency spicebox aftertaste. Light bodied, soft but prickling carbonation. An amalgam of the fruit inputs as expected, nicely balanced and not overly tart, good expression of the cherry and pear with the strawberries a nice accent. Very pleasant.

(750ml 2020 bottle from the cidery webshop) Pours clear deep gold with a decent but rapidly dissipating white head and no lace. Aroma is deep sweetish apple flesh, earthy apple skins, candied orange, some minerality. Flavour is not as sweet as the nose would suggest, quite dry and saline with a very light tartness. Golden apples, pale citrus, earthy apple skins, soft lactic roundness mid-sip onwards, salinity really builds into the finish with a bit of a soda water minerality to the aftertaste (which shortens the finish). Lightish body with fairly active carbonation. An enjoyable single varietal russet cider, a bit light in flavour for me but with nice expression.
