Brouwerij Hommeles werd opgericht door Jos Eberson, Jan Ausems en Kees Volkers vanuit het Houtens Brouwcollectief.
Met het collectief wilde de drie mannen de Utrechtse speciaalbiercultuur op de kaart zetten door middel van brouw demonstraties,
een lokaal speciaalbierfestival met alleen brouwers uit de provincie en door het delen van de geschiedenis van bier in de provincie.
Het charmante Utrechtse Bierbrouwersfestival (UBF) dat werd gehouden bij Molen de Ster in Utrecht groeide al snel uit tot een populair festival dat uit zijn voegen barstte, en verhuisde naar evenementenlocatie De Fabrique aan de rand van Utrecht. Ook was de vraag naar het bier dat door de drie mannen werd gebrouwen inmiddels zo groot geworden dat er een flink assortiment was ontstaan. Geschonken bij cafés en restaurants in de regio en verkocht bij verschillende speciaalzaken. Zo werd een stichting een BV, en werd brouwen serious business.
Since 22 december 2020 owned completely by Huttenkloas where also all the beers are brewed.

Bottle. An almost clear one, golden in color and with a minimal sized off-white head. The aroma has lots of grains, cellar and hay, with a fruity, soapy and perfumed touch. It’s rather sweet on the palate, with a pleasant carbonation level. Bitterness, fruityness, grains and cellar in the flavor. Dryish towards the finish. Medium body. Rather poor this one, partially unpleasant. 141024

Bottle. It pours a dense, finger-thick beige head over a clear-looking dark reddish brown body. The aroma has lots of coffee, with some cooked vegetables and dark chocolate. Burnt notes and a touch of licorice. It’s full-bodied and a bit too effervescent, with some alcohol warmth. Roasted, almost burnt malts, some coffee and chocolate and some licorice and bitterness in the flavor, lots of caramel sauce in the end. A decent one, but nothing more. 141024

Bottle. It pours an almost clear one, dark golden to amber in color and with a dense, two-finger light beige head. Lacings. The aroma has yeast, cooked vegetables, some roasted malts and acetone notes. It’s quite warming on the palate, with lots of carbonation. Medium body, quite dryish. Roasted malts, some yeast and a nice bitterness in the flavor. Lasting finish with roasted malts and a decent bitterness. Not very good this one, but sort of drinkable. 141024

Bottle from Mitra Bunnik, BB 10 2015, large sample. Almost clear copper color, big lasting frothy light brown head. Aroma of smoke, bit wood, bacon, red fruit, roast, toast, toffee. Bit sweet in taste, quite some bitterness as well for a bok, fruity. Slight dry. Didnt get any honey if I wouldnt have known. Medium body, soft carbonation. Quite nice actually.
