Tap at the brewery - hazy gold beer - compact head of loose, large bubbles - nose has quite a bit of tropical character complimented fairly well by the light vanilla and coconut of the oak - flavor is fairly sweet up front and through the middle, with light notes of spice, vanilla, pineapple and mango - finish dries out slightly, introducing a moderate bitterness and some light peppery spiciness that lingers into the finish - interesting brew, although not very wit-like.

Tap at River North - turbid reddish purple - fizzy, dark tan head that vanishes almost completely - a fairly well balanced quad - nose of dark fruit and cocoa - fairly full in th mouth, with well-masked alcohol - flavors of plum, chocolate, black cherry, a hint of toffee - fairly sweet, but with balancing notes of mild roast and light grape skin-like tartness - well done.

Tap @ River North. Pours a fairly hazy, orange appearance with an off white head. Fair fruitiness in the nose along with some pepper notes from the Belgian yeast. Kind of an interesting flavor with some peach/apricot/citrusy notes, a bit of spiciness from the yeast, and moderate bitterness. I got some booze notes but they weren’t overly harsh by any means.

Tap @ River North. Pours a red-orange appearance with an off white head. Pretty strong, piney hoppy, a bit toasty malty aroma. The hops in the flavor seemed to be overly done and too bitter and seemed to mask the caramel maltiness too much. My least favorite of the trip.

Tap @ River North. Pours a dark brown appearance with a tan head. Roasted dark malts, some chocolate, somewhat bitter hoppy flavor. I didn’t feel like the flavor completely came together between the roastiness of the dark malts and the bitterness of the slightly piney hops. Some decent qualities but could use a little work.

Tap @ River North. Pours a bit hazy, golden orange appearance with a white head. Somewhat citrusy fruity, somewhat peppery, yeasty, sweet malty aroma. I got a ton of apricot/peach fruitiness in the flavor along with some spiciness, though this really didn’t jump out at me as a saison- much more like a belgian ale. Ok but may need some tweaks (like using an actual saison yeast).

Tap @ River North. Pours a bit hazy, light yellow appearance with a white head. A bit of spiciness from the yeast, along with unmalted wheat, and an overall sweetness from the wheat malts in the aroma, but not spicy like many other witbiers. The flavor is much of the same with a nice, soft yet a bit spicy, wheat malty flavor without all the bullshit spices that usually just overly added to witbiers. Not bad.

Supposedly a Belgian double IPA, and that is pretty apparent - turbid orange pour - aroma is dusty, earthy, almost musky, with light esters and peppery hops, as well as light peppery phenols - flavor is initially sweet, with moderate notes of citrus - dries out through the middle - hops are peppery, zesty, lightly citrusy - Belgian yeast character arrives late in the form of very mild esters, light cobweb and mellow peppery phenols - I’m a fan of this beer - I am also a fan of the Belgian yeast this brewer uses, but he needs to learn how to use it well, as it works in the Belgian pale and this beer, but gets out of control in the saison - I see a lot of promise here.
