(Bottle, La Tana, Brussels, 17 Sep 2025) Golden colour with foamy, white head. Fruity, herbal nose with citrus, funky yeast, barnyard and flowers (chamomile?). Fruity, tart taste with notes of citrus, bread, herbs, flowers and oak wood. Low floral bitterness. Medium body, dry. Tart, herbal, citric and quite complex. Very nice.

Clear to little cloudy pale blond beer, small creamy white head, unstable, non adhesive. Aroma: herbal, funky, wild, brett, a bit lemony, zesty, floral touch, some almonds, a bit oxidized. MF: ok carbon, medium body. Taste: sourish start, fruity, lemony, good acidity, slightly funky, bitter touch, lemon juice, nice. Aftertaste: more fruity, grapefruit, lemony, zesty, grapefruit peel, bitter, orange peel, kumquat, sourish finish with quite some metallic notes as well, meh, ok but not really great.

Dorée, col crémeux blanc. Quel bonheur de voir des classiques allemands au lieu des sempiternelles hazy.
Arôme est délicat, finement fleuri avec une fine amertume noble – rétro-nasal pils
Palais sur une bonne base classique allemande, léger floral, crisp et bien balancée – petite pointe poivrée et un fini sec.

330mL bottle at Marciano Pub, pours a clear golden with a small white head. Nose has grainy notes, white wine grape must, gentle bugs, and sourdough yeast. Flavour is full of sourdough, white wine grape must, and some bugginess. Not particularly complex but clean and well-made. Pleasant.

On tap at Il Santo Bevitore, pours a hazy faded golden with a small white head. Aroma has plenty of bugs, a touch of spritziness, and light mustiness. Flavour is complex, with lots of grape must, plenty of mixed bugs, and a spritzy carbonation to deliver all this. Quite well-constructed, finishing just slightly acidic. Good stuff.

Couleur léger acajou rosé intense, col fin blanc-casé.
Bière gardant la base classique des sours de chez Sieman, le tout reprenant ce volet axé sur l'ajout de raisins natifs. Cette fois ci, c'est un raisin Tai Rosso qui est choisit ainsi que un apport fruité de mûres. C'est fin et léger en bouche, tout en légèreté avec un axé orienté fruits rouges/baies sauvages.
Le côté sauvageon aigrelet est discret, je trouve un léger funk venant plus de l'apport de levure maison à Sieman que j'avais déjà noté dans d'autres brassins pour le même style de bières. In fine, tout cela fonctionne bien.

On tap at teatro delle birre Mantova. Pours a clear gold with little head. Aroma is complex cider vinegar, fruity, stonefruit. Medium body. Flavour is sour and tart - nice acidity balanced by a good flavour profile. Lots of umami, light peach, cider vinegar. Delicious.

On tap @ BBF Brianza Beer Festival, Cascina Costa Alta - Biassono 2023. All'olfatto si esprimono sentori di sour. L'olfatto viene stimolato in maniera elevata e l'esistenza olfattiva è considerevole. Il cappello di schiuma resiste abbastanza. La grandezza delle bollicine è a grana fine. Il liquido è di aspetto opalescente. Il colore è giallo dorato brillante. Il corpo è pieno. L'amaro è discreto e c'è anche una componente leggermente acidula. La forza gustativa è elevata e permane in maniera sufficiente. Il gusto è piacevole. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è di decente intensità. Al gusto vengono donati toni di miele, frutta secca, agrumi, ananas, mandarino, mela verde, erbe aromatiche, frutto della passione, pipì di gatto e prugna.
