Description
Burdock brewery set up shop in what used to be an old Portuguese chicken restaurant, and they transformed the space into an artist-driven bar/restaurant/music hall/microbrewery run by a group of musicians and music lovers. They offer a rotating list of clean pale ales, complex saisons, crisp pilsners, zippy sours, and beer-wine hybrids that are all brewed in house.

Poured from 750mL bottle. Clear gold with small white head. Nice vinous and light funk notes, touch of oak, grape must, quite nice.

750mL bottle, pours a clear pale blonde with a small white head. Nose is fairly musty and slightly oxidized, with lots of bretty funky, and grape skins. Flavour is nicely vinous, with lots of white grape skins, a little oak, and plenty of funky notes. Vinous, nicely musty, and buggy. Good stuff, but version III was better.

Another drinkable beer. Light lime, picking up that touch of salt. Could kill a bunch of these on a padio.

Can 35.5cl. @home poured into a tumbler. Misty straw yellow colour, good frothy white head, diminishing slowly, sticky lacing. Rather faint aroma, saison yeast, lemon, pineapple, spicy notes, Taste medium sweet, light bitter and some tart, lemon, yeast, spicy notes. Medium body, watery texture, soft carbonation, dry sweetbitter aftertaste with again some tart, peppery on the tongue, refreshing, very nice.

Poured from 375mL bottle (pkg 11/2018; from Phill). Hazy dull pink-ish orange with small white head. Plums and wild yeast. Nice nose, but the flavour has dissipated a bit on the taste, slightly muted. Still decent.

Hazy red colour. Ass smell, cardboard, cherries. Dry mouthfeel, moderate acidity, strong fruity character, vinous finish, some good elements but medium complexity.

Pale purple and opaque. Lots of vinous notes, some cherry, and it's tart as well. It's got a lot of the cherry. Tart, a bit tannic. The vinous notes are there a bit, but the cherry definitely predominates.

750mL bottle, pours a cloudy bright dark red with a small pink head. Aroma is very buggy, with lots of red wine grape must, tart cherry skins, light barnyard funk, and some oak. Flavour is nicely integrated, with lots of buggy barnyard funk, red wine grape must, and tart cherry skins. Nicely buggy, with a good interplay between the grapes and cherries. Complex and well-designed. Excellent.

(750ml bottle from 4th and 7, Toronto) Pours clear pale red with a small fizzy pink-to-white head and no lace. Aroma is bright fresh raspberry and cherry, red wine grapes for sure providing both the red fruit and obvious vinousness, deeper Cab Franc skin maceration tones with warmth, herbal peppery accents, cedar, soft woody barrel tones, delicate 'dry' leathery Brett funk. Flavour is dry and lightly tart but not much beyond a light red wine in acidity, cherries take the lead over raspberries early in the sip though the latter appear a bit more towards the finish, nice smooth tannic grape skins, acidity as much grapey as overtly lactic, drying astringent herbs, lightly aromatic cedar tones, lightly peppery, funk is quite restrained but present, oak in the finish and aftertaste alongside soft minerality. Light-bodied with active filling carbonation. Very wine-like as expected, like a nice light-bodied Gamay in some ways but with a bit more heft than a Gamay beer might be with the Cab Franc vibes. Lovely.
