Description
The Nightingale Cider Co started as a hobby with a friend, under the name Gibbet Oak Cider, selling to local events. 2013 was a big year, when we released our first bottled ciders. People loved them, and wanted more, so in 2015 Sam swapped his job in sound recording for muddy boots and overalls, and returned to the farm to re-join Tim, and concentrate on doing what he loved.

500ml bottle from Eebria. Pale yellow gold colour, no head and tart apple aroma with a sulphury hint. Taste is sweetish apple, green apple, tart fruity and citric, with some acidity. Medium bodied, low carbonation, medium-dry tart finish. Quite OK.

500ml bottle from Eebria. Pale yellow gold colour, no head and aroma of straw, apple, sulphury hint. Taste is sweetish, juicy apple, mellow fruity, with some light funk. Slightly syrupy mouthfeel, mediujm bodied, low carbonation, medium-dry finish. Quite drinkable.

Sample@GBBF2018, London, with the the Malmö crew - clear golden yellow pour with small white bubbly head. Bottle from Firkin Alehouse Folkestone. Clear pink gold colour no head. Some red fruit flavour. Dry. Good apple skin flavour. Very dry. Rather good. Yep pretty good stewed fruit.

Bottle at The Firkin Alehouse Folkestone. Clear slight haze pale gold colour no head. Quite dry. Good apple flavour. Some tannin on finish. Dry on the gums. Decent enough. A little bready yeast.

Bag in a box at Kent & East Sussex Railway BF 2017. Haze pale yellow collar white bubbles a little yeasty farty not much pear a little juice maybe. Yes some white wine character. Medium. It recovered ok.

500ml bottle from Orchard Box. Pale yellow gold colour, no head and very light pear aroma. Taste is light pear, floral fruity, with some woody oak and funky notes. Watery mouthfeel, slightly syrupy, light bodied, low carbonation, short-lived slight fruity pear finish. OK, but just too watery.

500ml bottle. Pours very pale yellow, aroma of very faint perry fruit. Very clean and lightly oily on the palate. Very light perry pear fruit, and a little watery. Lacks a good perry character, rather forgetable.

500ml bottle from Murray’s General Store, Canterbury. Pours extremely pale, flat with lightly sweet apple pie aroma. Taste has a high amount of pure apple juice with a light, clean mouthfeel, just the right amount of sweetness with no harsh elements, allowing the apple fruit to shine. Really nice this.

Gravity dispense (bag-in-box) @ Pigs Ear Beer and Cider Festival, at The Round Chapel in Hackney, London, England. [ As Gibbet Oak Perry (Medium) ]. ABV: 7.5%. Light unclear light to medium yellow color with virtually no head. Aroma is moderate pear, tart pear, fruity pear, wood, light oak. Flavor is moderate sweet and light acidic with a average to long duration, tart pear, sweet pear, oak - wood notes. Body is medium, texture is oily to watery, carbonation is flat.
