Description
The Nightingale Cider Co started as a hobby with a friend, under the name Gibbet Oak Cider, selling to local events. 2013 was a big year, when we released our first bottled ciders. People loved them, and wanted more, so in 2015 Sam swapped his job in sound recording for muddy boots and overalls, and returned to the farm to re-join Tim, and concentrate on doing what he loved.

Can from Appellation Wines. Appearance - golden yellow with steady carbonation. Nose - sweet red apple and ripe apple skin. And a little perfumed. Taste - red apple skin and juicy red apple. Palate - light to medium bodied, creamy then freshly acidic. Overall - very pleasant.

75cl bottle from Appellation Wines. Appearance - cloudy yellow. Steady carbonation. Nose - funky bruised apple. Citrus and hay. Taste - fresh apple that seems a bit stewed while still being fresh and acidic. Palate - surprisingly creamy for a cider. Balanced with good acidity. Overall - enjoyed this. This wild ferment approach is definitely better on cider than on wine.

Keg @ Little Swift, Margate. Clear pale golden with a small carbonation. It is fairly sweet, but a dryness subdues this, however its apple is good and lingers in its aftertaste.
