From a 330ml bottle on 3/8/2016. Pours the darkest of brown with barely any head. Has a light aroma of chocolate, caramel and molasses. Taste wise, it’s sweet up front, with fudge, caramel and dark chocolate, which is met by a slightly salty, sharp, dry bitterness, with hints of soy and Bonox. Has a full body, an oily texture and soft carbonation. Maybe not an absolute bullseye, but definitely interesting and pretty good.

Bottle. Clear gold with a white head that fades to a cm. Somewhat shy aroma of damp hay, old lemons, crackers. 7- Aroma is funky but taste is much more sour than funky and unfortunately rather metallic.Underneath is some grain and hay, gentle citrus. Some problems and a bit underwhelming, but OK and clearly going somewhere interesting.

Bottle, 11C. I suppose the advantage of drinking it at home is being _really_ sure I’m not swigging the finger bowl. Unclear pinkish light brown, no head. Aroma led by peppery and pithy lemon myrtle, but there’s damp laundry-like wheat and some cherries and their stones too. Light bodied, just slightly slippery. There was a faint pop when I opened the bottle, but it’s very close to flat. After nearly being too much in the aroma, the lemon myrtle’s toppy notes almost disappear on tasting. There’s a dried leafy edge to the slightly peppery wood at the end. Only a suggestion of cherry and very mildly funky and tart. As an aperitif for NOMA’s visit to ’straya, presumably presaged the culinary glamping to come pretty effectively. Pretty good.
