On September 1998, Dieu Du Ciel! finally opens its doors, with more than 300 people in attendance. Today, Dieu Du Ciel! is engaged more than ever in the local community as the demand for its products continues to rise both at home and abroad.
In 2015, the microbrewery in St-Jerome increased capacity from 9000 to 13000 hectoliters annually, in an effort to better satisfy a growing band of faithful converts.

Appearance: clear yellow color with some carbonation seen rising and a two finger white foamy head which dissipated at a fairly nice slow pace then left some spotty lace
Aroma: light sweet grains, subtle floral hops, mild biscuity malts
Flavor: melds the prior noted aromas together fairly sweet with a light aftertaste of malts and floral hops
Texture: light bodied, sessionable; fair smooth along the tongue; finishes crisp with airy grainy sweetness
Overall: seemed a bit lighter than expected but mostly a decent beer to come back to in warmer weather.

Appearance: milky yellow color with a thin little white foamy cap of a head which slid off inwardly and left some light concave lace
Aroma: mangoes - sweet and tart; light funky tones, light lemon, subtle sweet grass
Flavor: mildly blends the prior noted aromas fairly nicely in a semi-sour to sweet and funky sort of way; no aftertaste
Texture: light to medium bodied, nice sipper, some light astringency on the tongue; finishes crisp and semi-mango-like with some funk
Overall: I say it's a pretty nicely done fruited sour ale.

On tap. Pours black with moderate tan head. Aromas of bourbon, black coffee and roasted malts. Flavors of same with more earthy coffee, but also lots of oaky bourbon alcohol. Bourbon is overwhelming.

Effluves de Bourbon, esters de cerises confites, fond caramélisé et boisé en sourdine sont les principales caractéristiques des arômes.
Petite mousse semi crémeuse qui s’attarde sur le liquide brun aux reflets acajou et presque limpide.
Chaleureuse et maltée, avec beaucoup d’esters en entrée de bouche.
Cerises, framboises, fruits confits sur une base caramélisée.
Boisé et vanille issue de la barrique.
Alcool fort et épicé sans être trop agressif.
Sous notes tropicales des houblons rappelant la mangue.
Une trop légère amertume de conifères s’intègre à une finale où le Bourbon et les épices accaparent une bonne partie de la palette gustative.
Néanmoins, malts, esters, barrique et alcool contribuent à la complexité bien élaborée de cette bière.

Bottle: Poured a dark golden color ale with a medium size foamy head with good retention with some light lacing. Aroma of sweet Belgian malt notes, some residual candi sugar notes with some citrusy notes. Taste is also a mix of residual candi sugar notes with some citrusy notes and sweet Belgian malt with some peppery notes. Body is about average for style with good carbonation. Enjoyable tripel but not sure the addition of citrusy notes was necessary.

2022 version. Deep brown/black with a beige head. Dark malts, bourbon, coffee, molasses, toasted malts, oak, chocolate, a touch fruity. Full, slick body. Finish is bittersweet with light fruit and cracker with some booze. Bold.

A deep dark reddish brown barley wine with a thin mocha head. In aroma, sweet fruity caramel malt with vinous notes, dark fruits, light bourbon barrel notes, woody notes, very nice. In mouth, a nice caramel malt with vinous character, alcohol warmth, boozy, licorice, Pinot de Charente, very nice and rich. On tap at l'autre oeil.
