Description
Timmermans has kept the tradition of the true lambic alive for over 300 years now. This unique beer, made with 30% wheat, is brewed in Itterbeek, in the oldest active lambic brewery. At its origin is a miracle: micro-organisms in the air of the Senne valley end up in the wort and cause spontaneous fermentation. This is why a true lambic is brewed only within a 15 km radius of Brussels, in the area known as Pajottenland. Since 1993, Martin’s Finest Beer Selection has been proud to preserve this authentic part of Belgium’s beer heritage.

250ml bottle from Carrefour. Pours a generally clear deep red, large foamy white head. Syrupy sweet cherry, can't taste any black pepper.. not great, too artificial and a touch cloying.

0,75l bottle at tasting at home. Bb 31/12/2044. Yellow rather hazy color, small white head. Smells very much of hay, earthy, light tomato juice, peppery. full body, target carbonated. Tastes funky, earthy, spices, minerals, pepper, herbal, oak. Finishes lightly dry and lightly sour with notes of pepper, herbs and leathery notes. Rather heavy carbonation. Once that dissolves its a lot better

Color dorado claro, velada, espuma blanca de media-alta retención, el aspecto es bonito y radiante. Bastante atractiva en tanto en boca como en olfato, tonos funky, granero, paja, levadura, trigo, algo de cuero, cuerpo ligero, seca, refrescante, muy bebible, ligeramente ácida y agria. En definitiva, muy disfrutable y atractiva, que rica.

Color ámbar claro, velada, espuma blanca de buen espesor bien retenida. En nariz emana notas de cítricos, azúcar Candy, cierto toque. En boca es agridulce, ligeramente ácida, fondo azucarado, notas de fruta madura. No está mal

Sample from jerrycan at Carnivale Brettanomyces 2025, John Versyck blending workshop. Didn't take many notes, just enjoyed good beers and good company. What I do remember: Almost 3 years old. Citris acid, wood, like honey without the sweetness of honey.

Clear orange beer, small creamy off-white head, unstable, non adhesive. Aroma: oxidized, sweet, some caramel, sherry, fruity touch, some dried fruits, some cardboard. Doesn’t smell great, for such a young beer… MF: very lively carbon, medium to light body. Taste: bitter touch, oxidized, fruity, lots of green apples, a little funky, bitter, earthy. Aftertaste: very sourish, lemony, bitter touch, fruity, green apples, a bit lemony, floral finish, pleasant but lacks some complexity. And the strong acetaldehyde is only drinkable because this is a sour beer, I would definitely hate this in another beer style.

Caged and corked bottle 37.5 brewed in 2016, bottled in 2019 (bought April 2021, bbd 12/34) @home poured into a tumbler. Cherries and wood nose. Deep cherry red colour, good fizzy pink head, diminishing mostly, minor lacing. Comples fruity aroma, sour cherries, cherry marmelade, wood, fortified wine, vinegar. Taste sweet and sour, sour cherries, vinegar, wood, funk. Medium body, sticky texture, soft carbonation, mouthfilling sweet and sour aftertaste with underlying bitterness, cherries and wood till the end, spicy notes, fruity, refreshing, very good.
