Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Bag in box at jolly judge. Pours golden orange, nose is soft apple, little funk, taste is juicy apple, sweet.

Cask at Cider Tap. It pours cloudy rich amber with a small, bubbly white head. The aroma is rich, earthy, funky, must apple pie and vanilla ice cream. The taste is rich, boosty alcohol, sweet apple pie, light vanilla, wood, damp leaves, earthy funk and a touch of acidity. Medium body and a hint of carbonation. A bit chewy perhaps, but it has a good depth of flavour and balance. A quality cider.

Bottle from Three Counties Cider Shop, Ledbury, Herefordshire, consumed at home sat down the garden cooking a BBQ Saturday 11th June 2016 Light gold in colour, slight haze, medium sweet perry, smooth easy drinking, not bad for the abv. A6 A4 T7 P4 Ov13 3.4 3.4

Bottle shared at the Watford tasting, many thanks to Teresa and Daniel, a hazed golden coloured pour with a fading loose white head. Aroma is really funky, cheesey, farmyard, blue cheese. Flavour is composed of manure, blue cheese, funky tangy apple, salty blue cheese. Palate is tangy, highish carbonation. Really funky and interesting.

Bottle big thanks to Danny. It pours lightly hazy golden with a tiny white head. The aroma is fresh, sweet, juicy, apple pie & icecream, barnyard, old cheddar, touch of tannins and earth. The taste is crisp, tart, juicy, sherbet, apple pie, squeeze of lemon juice, sherbet, barnyard, wood and tannins with a dry finish. Medium body a fine, prickly carbonation. Nice funky farmyard action.

Bottle shared in Watford - many thanks to Theresa! Pours clear orange-gold with a few bubbles about. There’s some manure in the nose, semi-ripe apples. Light sweet flavour with more slight manure/poopy notes, a little cheese, juicy apples. Medium bodied with spritzy carbonation. Finishes with further cheesy notes, mozzarella and blue, a bit more poop, more ripening apples. Well, this is funky stuff.
