We started by sharing a building with another brewery in 2011, but we always brewed our beer ourselves. Within the first six months we realized there wasn’t enough space for two breweries in one building, so we began the search for a new place. By 2013, we had built a new, modern brewery in the wonderful city of Fairfield, California and moved all our operations there, including our new distillery.

Sampled from a 22 oz brown bottle this beer poured a black color with a medium sized creamy brown head that lingered and left good lacing. The aroma was toasted marshmallow and hazelnut. The flavor was toasty and malty with lots of hazelnut and hints of cocoa, wood and anise. Long toasty hazelnut and cocoa finish. Moderately full bodied and creamy. Excellent.

Latest word is that this may now be called simply Empire. It’s still a BA IS. Tap at The Davis Beer Shoppe. Pours black/brown with a creamy dark tan head. Aroma of dark fruit, treacle, bourbon, maybe coffee. Full bodied. Flavor is treacle, burnt malt, bourbon, coffee. Finishes somewhat sweet, bourbon, dark malty. Smooth.Tasty. The bourbon is at a nicely moderate level. Everything works really well together. Could be one of the better BA IS brews.

Tap at The Davis Beer Shoppe. Pours very hazy ruddy with a huge pinkish head. Aroma is sourish berry. Med minus body. Flavor is mildly (very) sour redberry. Obviously I am not all that good with hibiscus. Light, fruity, and pretty tasty.

Tap at Preserve Public House in Winters, CA. Pours quite black with a slight beige head. Slightly plummy aroma. With chocolate and coffee? Med + body. Flavor is chocolate, mildly greasy/nutty and I still think a touch of coffee. It’s good.

Tap at Preserve Public House in Winters, CA. Pours ruddy dark amber with a beige head. Rather pine aroma. Med body or better. Flavor is roasty and piney (strange how citrus and pine seem interchangeable sometimes). No heat as such, but the alcohol hits the nose in a noticeable fashion while drinking. Really good.

Hops evident in the aroma at first pour, and then come on full strength at first taste. Hazy amber body with small silky head. Hoppy astringent aroma, taste of pine sol,caramel, slick mouth feel.

Draught at Garage 39. Big oyster-umami-soy sauce in the nose, along with chocolate, coffee, and burnt wood. Sweet and roasty, lots of umami again. Strong, prickly alcohol and hop finish. Good.

Tap at Dig. Nose or roasty chocolate, umami, wine ro port, and lots of phenols-berries and rubber. Flavor is super phenoloc, tons of black berry and burnt rubber, with chocolate and lots of umami. Nice silky body. This could be good but the phenolic character makes it almost impossible to drink.

Dark brown color. Very sweet, huge hazelnut, chocolate pie jump from the nose, with dark fruit and dark cherries playing in the background. Very intense. The mouth is sweet but eventually you realize it has nice bitterness to balance things out. Decent roastiness is impressive along with hazelnuts, chocolate, frangelico. Very intense beer that hits your five ways to Friday, but I loved it, though one pint is probably enough.

On tap at CBB’s Imperial Event. This 800 yen, this pours a thick viscous oily pitch black pour with a beige head that lingers a long time. A full smooth body. . Umami, meaty, chocolatey aroma. Full bodied, chalky, chocolatey & sweet dark cocoa. Smooth, umami, dark chocolate, licorice, bitter roasty notes. A top quality beer.
